Daryl Schembeck: They're very versatile. You can braise them, slice them thinly for Shabu-shabu, stuff them in ravioli or barbecue them. R: What's your favourite memory or anecdote associated with the produce? DS: The best short ribs dish I ever had was in New York at a Japanese barbecue restaurant where they sliced the meat really thinly and changed my opinion of what short ribs where. I always thought that you had to cook it for a long time but that's not true. R: What's the best way to prepare it? DS: My favourite way is to braise it, shred the meat, stuff them in ravioli and finish off the dish with grated cheese on top. R: What other ingredients does it pair best with?
