Lima, Peru will be a hotbed of culinary talent Wednesday when top chefs from Mexico, Central and South America descend on the city and wait with bated breath to learn if their restaurant has been declared the best in Latin America.

It's no coincidence that Peru has been chosen to play host to the inaugural edition of the Latin America's 50 Best Restaurants 2013 awards this week, given that the flavors of Peruvian cuisine are quickly gaining momentum around the world.

In addition to ceviche, Asian influences on Peruvian foods have spawned interesting fusion flavors, inspiring legendary Spanish chef Ferran AdriĆ  to open Nikkei-themed eatery Pakta in Barcelona.

Nikkei cuisine is described as fusion Japanese and Peruvian cuisine. In advance of the gala ceremony, experts and industry leaders bestowed the Lifetime Achievement Award to Peruvian rock star chef Gaston Acurio (pic), who could be described as the unofficial ambassador for the country.

Credited with nearly single-handedly sparking a cultural revolution and restoring pride in Peru's culinary heritage, Acurio receives a hero's welcome wherever he goes.

His restaurant empire also spans the world including Chile, Brazil, Colombia, Mexico, Spain and the US.

Astrid y Gaston is ranked 14th on the World's 50 Best list. Last month, chef Helena Rizzo of Sao Paulo restaurant Mani was named Latin America's Best Female Chef for marrying traditional Brazilian ingredients in contemporary dishes like baked maniocas or cassavas (a native root vegetable) served with tucupi froth (a yellow sauce made from grating and juicing the manioc root), coconut milk, and a white truffle olive oil.

Before helming Mani, Rizzo also worked the kitchens of El Celler de Can Roca in Spain, currently ranked the best restaurant in the world.

The Latin American edition of the awards comes after organizers of the World's 50 Best Restaurants list launched a regional version in Asia earlier this year.

Similar to previous awards, winners for Latin America will be compiled by a group of 250 industry leaders including chefs, restaurateurs and critics representing each region: Mexico and Central America, South America (divided into north and south) and Brazil.

Given chef Alex Atala's recurring popularity on the World's 50 Best list - his Sao Paulo restaurant D.O.M. is currently ranked sixth - odds are strong the Brazilian chef will be among the top winners. – AFP/Relaxnews, September 4, 2013.

Because there just aren't enough deep-fried liquid foods in the world, KFC Japan has gone and thrown corn chowder into the deep fryer.

Spun as deep-fried soup, the breaded corn fritters will be launched September 5 in KFC restaurants across Japan and carry on a culinary trend that's taken the country by storm: creamy corn potage, reports RocketNews24.

The popularity of corn soup has made it a fixture on cafe menus in Japan and - as is bound to happen in a country where culinary trends often take on a life of its own - undergone unexpected interpretations including popsicle form for the summer.

Only natural that the extreme should also swing the other way and end up in the fryer, notes RocketNews24.

When it comes to deep-frying liquids, there are perhaps no better culinary alchemists than US state fair food purveyors, who've deep-fried Coca-Cola and Kool-Aid. – AFP/Relaxnews, September 4, 2013.
