McEwan turns up the heat in KL

Posted: 09 Oct 2011 09:50 PM PDT

Chef Mark McEwan shares some tips on making risotto.

KUALA LUMPUR, Oct 10 — Mark McEwan played to a quiet audience in the Ritz-Carlton in Kuala Lumpur last week. It was raining outside, and the Canadian chef, restaurateur and entrepreneur, did not feel the heat at all, even if he was cooking two things at the same time — a risotto and a beurre blanc or butter sauce.

Both seemed complicated but McEwan was unfazed. "When you cook risotto, a lot of people feel you have to be chained to the stove, but you don't have to. In fact, if you keep stirring it, you pull the starch out of the rice and thicken it," he said.

The grilled seabream with capers and mint... absolutely delicious.

So he was variously doing the butter sauce as well as the risotto with corn and shrimp. He made it look easy, but then he has cooked it for 350 guests at a wedding party before.

"I had eight different containers of risotto going, and 10 pans sautéing the perch for it by my team of catering people," he said. For this coolest of chefs in the AFC programme The Heat with Mark McEwan, it is no sweat.

When he goes back to Toronto, he will encounter his biggest catering challenge yet. "I have a function in a football stadium for 2,000 people, with four courses plated. It's the biggest party I have ever done, and it's the toughest!"

McEwan owns four restaurants in Toronto – North 44, Bymark, ONE and Fabricca — a catering company and a fine foods store at The Shops at Don Mills, that spans 22,000 sq ft! The gourmet store is amazing — the endless variety which showcases his recipes, the bustling activity. It makes you feel like you would be quite happy buying the ready meals and never have to cook again! He's also the author of a cookbook called Great Food at Home and he's about to come out with his second one.

As he was cooking, he also took a peek at his own show playing on the screen beside him. "It's really interesting. I forget we are on AFC: it's a show I haven't seen a long time." He had worn his hair long in the show, but he had got tired of the wind blowing it around and had it cut short before he came.

Notice the hair, before (on banner) and after!

As he did the grilled seabream with capers and mint, he reminisced about how "our cuisine has changed in the restaurant." "Braised dishes have become simple but texture is more complex. Fresh ingredients are carefully chosen."

He talked about how Toronto is a great city with a diverse foodie combie. "The amazing chef community there has given the city a vibrancy that didn't exist 20 years ago. It has happened in my lifetime, my career and time in the business."

Two tips he shared about the risotto and the seabream: "When you serve the risotto, it should fall down on the plate and be very tender." As for the seabream, "put oil on the fish before putting it into the pan for frying. It prevents the skin from sticking to the pan."

He shared about how Canadians like to eat their fish deboned. "I like how you eat it in this part of the world, on the bone. I like dissecting my own fish."

He went on to do ricotta gnocchi with heirloom tomato sauce. "People find making gnocchi intimidating but I'll show you how easy it is." His hands in the dough with ricotta cheese and egg, he told us about his wife to whom he has been married for 25 years: "She loves to cook but she gets very confused about recipes. She reads them 100 per cent. She thinks the recipes are cast in stone!"

The soft pillows of ricotta gnocchi served with heirloom tomato sauce... brilliant.

Only two days before this event I had watched The Heat with Mark McEwan and how he was working out a recipe for his book with his wife. He told her to put "two glugs of olive oil" into the pan and she asked, "How much is that?" It turned out to be 2 tablespoons, and his wife protests: "But that's more than 2 tablespoons!"

Said McEwan: "When you cook, learn the feel of things. There's some comfort in how frequently you do it. It may not be perfect the first two times, but it's fun."

About the gnocchi he was making: "It's fun to teach your kids to do it. Have it at a party, get their hands dirty! To do this well, do it every day and do it with love."

We got to taste full courses of what he had demonstrated before us — the risotto with sweet corn and shrimp, ricotta gnocchi with heirloom tomato sauce and grilled sea bream with capers and mint. The risotto was done just right and tasted good. The gnocchi was soft and pillowy as he said it should, and I loved the grilled sea bream with its crispy skin, and the piquant capers and mint.

McEwan was also a judge on Top Chef Canada. "I watched 16 young chefs battle it out. Talk about pressure — how they lived with one another and competed for eight weeks. The show has done a lot for chefs."

The chef is surprised at how food trends have come full circle: "Less is better, and tradition is the key. It's interesting how fast the food scene has developed in the past 30 years." He is big on natural produce, making his own salami and pickling, which he considers a badge of honour. He's proud that of 140 cheeses in his McEwan foodstore, 111 are produced in Canada!

Asked about whether he would ban foie gras in his restaurants, he said: "I love foie gras. It has a place in high-end restaurants. I have visited the duck farms and they are very happy following the farmers around to be fed." He only stocks ocean-friendly fish and definitely not blue fin tuna whose numbers are depleting.

He considers his journey from chef to owning four restaurants, two catering divisions and a gourmet store, appearing on TV shows and writing cookbooks as a natural evolution. He has 450 employees: "It's a great talent pool and allows us to experiment on what to do with new products we bring in. I'm 54 and having more fun in the business. I'm not a celebrity chef!"

McEwan had come from Singapore, where he got to taste two of the best cocktails he had in his life! He plans to come back to Malaysia to eat. "I love how people here eat fish with bone, and have something out of a shell."

Vettel make his point 15 times over

SUZUKA, Oct 9 — Sebastian Vettel made his point 15 times over at the Japanese Grand Prix today as he celebrated becoming Formula One's youngest double world champion.

The 24-year-old Red Bull driver, who had needed just one point to become only the ninth driver to win back-to-back titles but ended up with 14 more than required, has never played a numbers game however.

Starting on pole position for the 12th time in 15 races this season, Vettel set his sights on nothing short of victory and only towards the end did he bow to his team's demands and settle for third place, two seconds behind McLaren's winner Jenson Button. "At the end of the race his pace was very good and we were trying to contain his enthusiasm, reminding him that he'd already got 14 points more than he needed," said team boss Christian Horner.

Vettel had vowed to win his second title in style and the German delivered on his promise, albeit in very different style to the first.

In Abu Dhabi last November he had won against the odds with a victory in the final race after not having led the championship at any stage until the very end.

This year, the champion has led from the start with nine wins and 14 podium finishes. Though today's result at Suzuka was his second worst finish of the season, there was never any doubt about the title outcome.

"To win the championship here is pretty special and a bit funny at the same time, because it's as confusing as the first one," Vettel, who lost out to Button and Ferrari's Fernando Alonso in the pitstops but hunted them down in the closing laps, told reporters.

"I think it will surely take a little bit of time (to sink in) but the season has been fantastic.

"I think with a less dominant car than last year we were able to do a very, very good job. We are very strong as a team. Every time it mattered we made very few mistakes... we were there, we were performing."

Vettel's first win triggered an all-night party in Abu Dhabi, and a lot of hangovers, but there are four more races to go this time with the next one looming in South Korea next weekend.

"The funny thing this year is that next week there is the next race," he said.

"Last year, after the chequered flag, it was all over. There was a long period of time when you weren't in the car again. So it's a bit different this year and it makes it even more special in a way."

Button, who won the 2009 title with a race to spare, advised Vettel to take some private time to let what he had achieved sink in.

"I remember when I won the world championship, immediately it was a strange feeling," said the Briton, who left the post-title celebrations in Brazil that year to go back to his hotel bedroom and savour the moment in solitude.

"It was like: 'What am I supposed to feel right now?' And it takes a little bit of time. It normally comes when you're on your own and you can really think about what you've achieved.

"I'm sure Seb's going to look forward to that tonight or about five or six in the morning," added the McLaren driver with a smile.

Vettel, for once, was in less of a hurry.

"Oh, no," he grinned, as his team laid the groundwork for a party night by donning T-shirts celebrating his title. "Afternoon." — Reuters

Button delights in ‘home’ Japanese win

SUZUKA, Oct 9 — Jenson Button reduced his girlfriend to tears today with a Japanese Grand Prix victory he hailed as one of the most special of his Formula One career.

Even if the McLaren driver's joy was eclipsed by the celebrations at Red Bull for Sebastian Vettel's second successive championship, his delight was obvious from the moment he crossed the line.

Parking his car at the end of the pitlane, in the wrong place, the Briton stood up in jubilation and then jogged back to the garages waving at the fans in the packed grandstand opposite.

In seven years as a Honda driver, the 31-year-old with a deep love of the country and a Japanese girlfriend had only once managed to appear on the podium at the Honda-owned circuit.

This year's race was made more emotionally-charged by Button's involvement in fundraising efforts to help victims of the earthquake and tsunami that devastated a swathe of northeast Japan in March.

"It feels like a home win, and it's a very emotional win, not just for myself, but the whole team, and especially my close-knit little team of (trainer) Mikey (Collier), the old man (father John) and (girlfriend) Jessica (Michibata)," the 2009 world champion told Reuters.

"Obviously that's because of the connection with Japan through Jessica, who was bawling her eyes out after the race, so it was very difficult for me to stop myself from crying.

"But it was a very special race for all of us, and also because this circuit is just phenomenal, a work of art I would say," added the Briton.

"The layout is unforgiving, but every lap makes you smile, and also there is the history that goes with this circuit."

In winning, Button denied Vettel his third successive Japanese Grand Prix win — although not a place in the record books as youngest double champion — and followed in the footsteps of some of the giants in the sport.

Brazilian Ayrton Senna, his own compatriot Damon Hill, seven times world champion Michael Schumacher and Mika Hakkinen all won at Suzuka — fast and flowing and one of the great driver circuits — over the years.

"One of the most important things here is the crowd. They are so supportive," said Button, who was forced on to the grass at the start by Vettel but was able to joke about it afterwards.

"I just went out there with the trophy and the grandstands were still full. Unbelievable. I had never seen anything like it. They are so passionate about their motor sport." — Reuters

Paul McCartney to serenade heiress bride

Posted: 09 Oct 2011 04:13 AM PDT

LONDON, Oct 9 — Former Beatle Paul McCartney marries American heiress Nancy Shevell in London today and will serenade her with a song written in her honour, media reports say.

McCartney will wed the divorced New Yorker in a civil ceremony at London's Marylebone Register Office before 30 invited guests, ahead of a reception in his back garden in north London, the reports say.

The 69-year-old singer-songwriter, whose success in writing some of the world's most enduring pop classics with the Beatles has helped him to amass a fortune of hundreds of millions of dollars, is marrying for the third time.

He and Shevell, 51, posted wedding banns last month in the same place where McCartney married his late first wife Linda in 1969, at the height of the Beatles' fame. Linda died of breast cancer in 1998. His second marriage, to former model Heather Mills, ended in acrimonious divorce in 2008.

A fridge filled with champagne was delivered yesterday to the house in the upmarket neighbourhood of St John's Wood — within a stone's throw of the Abbey Road studio where the Beatles recorded most of their albums.

The couple went to a local synagogue where Shevell, who is Jewish, received a blessing, before dining at a floating Chinese restaurant with family and friends.

McCartney's spokesman declined comment yesterday, but McCartney himself briefly spoke to reporters outside his home, saying: "Hi guys, thanks for coming out. We're looking forward to it."

Asked if he was nervous about the big day, McCartney laughed and said: "Don't be silly, now. Of course not," according to the Sunday Mirror.

The choice of wedding date seemed especially poignant as today would have been the 71st birthday of John Lennon, McCartney's songwriting partner, who was gunned down in New York in 1980.

As well as the new song, he plans to sing "Let it Be", which he sang to Shevell on one of their first holidays together three years ago, and then her favourite, "Let Me Roll It", according to the Sunday Mirror.

McCartney's fashion-designer daughter Stella made Shevell's dress and helped create the three-course organic vegetarian menu, the paper reported.

McCartney has a son, two daughters and a stepdaughter from his marriage to Linda, and a daughter from his marriage to Mills.

All his children will be at the wedding, and his brother will be best man, the Mirror said, adding that the couple would honeymoon in the Caribbean. — Reuters

Gabor, 94, has been in poor health for some years, and her husband, Frederic Prinz von Anhalt, told Reuters that "it doesn't look good."

Von Anhalt said she had a high fever and high blood pressure, and that a feeding tube she had previously had in place had become undone and "everything was coming out of her stomach."

"She is in a very unstable condition," he said.

Von Anhalt said he took her to the hospital at about 10:30am. She has been hospitalised numerous times for a variety of serious ailments, including a stroke, over the past decade. — Reuters

Experts deny Taj Mahal ‘collapse’ claims

Posted: 08 Oct 2011 05:36 PM PDT

Earlier this week, Britain's Daily Mail newspaper quoted Agra's elected parliamentarian as saying the Taj would "cave in between two and five years" if conservation efforts were not launched. — AFP/Relaxnews

AGRA, India, Oct 9 — Archaeologists overseeing the upkeep of the Taj Mahal denied on Friday a press report that said the iconic structure could collapse in as little as two years because of its weakened foundations.

The white marble mausoleum, known as the "monument of love" after it was built by a former Mughal emperor as a tribute to his dead wife, attracts four million tourists a year to the northern Indian town of Agra.

It stands on the banks of the depleted and polluted river Yamuna, which provides moisture to wooden structures that hold up the onion-shaped dome and its four minarets.

Earlier this week, Britain's Daily Mail newspaper quoted Agra's elected parliamentarian Ramshankar Katheria as saying the Taj would "cave in between two and five years" if conservation efforts were not launched.

The Archaeological Survey of India (ASI), which began a major facelift for the Taj Mahal in 2007, dismissed the dire predictions for the 358-year-old monument.

"We have been having regular tests conducted and agencies including Survey of India have never pointed out such threats to the survival of the Taj Mahal," ASI's chief archeologist in Agra, I.D. Dwivedi, told AFP.

Katheria denied forecasting a collapse within five years but he told AFP that he had conveyed his fears for the future of the Taj to Indian Prime Minister Manmohan Singh and President Pratibha Patil more than once.

"I am demanding a high-level enquiry to analyse the severe threat posed to the wooden structures in the foundation of the Taj," the MP said.

He warned that the supporting timber was turning brittle because the level of Yamuna was declining due to the over-extraction of water by residents and businesses.

"The timber in the plinth of the Taj would soon corrode and termites could set in unless it quickly finds a source of moisture," Katheria said in an interview.

"The acrid dust from the dry riverbed is also dulling the domes of the Taj and the government must build a barrage across Yamuna to keep its water levels high," Katheria, who belongs to the main opposition BJP party, added.

The Taj, a popular backdrop to photos of tourists in India, was built by Mughal emperor Shah Jahan as a tomb for his beloved empress, Mumtaz Mahal, who died while giving birth to their 14th child in 1631.

India's Supreme Court in 1996 declared a 10,400-square-kilometre area as a protected zone for the Taj Trapezium Zone after industries were found to be contributing to the monument's yellowing.

It ordered 292 coal-based factories to switch to natural gas or relocate outside the zone by April 30, 1997. Conventional vehicles have also been banned within a 500-metre radius of the building. — AFP/Relaxnews

PAS: Bajet 2012 ‘morfin’ kesan tsunami politik 2008

Posted: 09 Oct 2011 04:00 AM PDT

Zahid gesa pesara, bekas tentera jangan protes Rang Undang-Undang Veteran

Posted: 09 Oct 2011 03:25 AM PDT

Kementerian Pertahanan menerima peruntukan RM13.76 bilion, iaitu peruntukan keempat tertinggi.

Reckless Rooney’s red mist

Posted: 08 Oct 2011 05:01 PM PDT

OCT 9 — England's qualification for the European Championships came at a heavy cost, with Wayne Rooney facing suspension from at least the opening game of the tournament after getting himself sent off during the 2-2 draw in Montenegro on Friday night.

It was a strange game. England were utterly dominant in the opening half hour against a Montenegrin side that seemed completely overawed by either their opponents or the occasion, or both.

The home side had barely touched the ball when Ashley Young headed home Theo Walcott's wonderful cross after 10 minutes, and the same pattern of play continued with Montenegro sitting deep and allowing England to totally control possession.

When Young finished off a crisp move by turning provider to set up a tap-in Darren Bent after half an hour and give England a 2-0 lead, there seemed to be no way back for the hosts. But then England took their collective foot off the gas and became sloppy, and Montenegro took advantage by pulling back a goal through Elsad Zverotic on the stroke of half-time.

Montenegro were a transformed side in the second period, suddenly finding the kind of energy and confidence that had been conspicuous by their absence during the opening half hour. The home supporters also found their voices, casting aside the surprisingly subdued atmosphere at the start of the match.

Suddenly, from being 2-0 up and coasting, England were in a proper game.

The defence held firm for 25 minutes, but then came Rooney's moment of madness. After a heavy touch from Rooney allowed Montenegro defender Miodrag Dzudovic to hold him off the ball, the Manchester United striker reacted by violently and blatantly hacking at the defender's legs.

It was a no-brainer for German referee Wolfgang Stark, who had a clear view of the incident and was left with no option but to produce a straight red card.

With a man's advantage, Montenegro were able to exert more pressure on the England back line and finally grabbed a deserved equaliser in stoppage time when Dzudovic produced a brilliant deep cross and Andrija Delibasic bravely converted at the far post.

The subsequent final whistle sparked scenes of unrestrained jubilation from the home fans and players, and really it should have been a double celebration – a point apiece had secured a place in the play-offs for Montenegro and a place in next summer's tournament for England.

Yet, while Montenegro's delight was unquenchable, the silver cloud of England's progress was accompanied by a heavy cloud. Not only had a two-goal lead been squandered in sloppy fashion, but their best player will be suspended from at least the first game of the tournament – maybe more if UEFA's disciplinary committee regards Rooney's red card incident as violent conduct (which they would have every right to do).

It was a senseless act from Rooney; unprovoked, unnecessary and entirely brainless – a classic example of the instinctive and destructive "red mist" that sometimes descends upon sportsmen in the heat of battle (most memorably when French legend Zinedine Zidane ended his career by violently headbutting Italy's Marco Materazzi in the 2006 World Cup Final).

Why did he do it? Psychologists are queuing up to share their theories, but nobody really knows – not even Rooney.

Was it a reaction of anger to the poor touch that allowed Dzudovic to sneak in front of him? Frustration at his lack of involvement in the second half? Was it retribution for an earlier unpunished challenge by Dzudovic? Or, as many people have automatically assumed, was it a subconscious reaction to the arrest of his father in an alleged gambling scam the previous day?

Maybe one of the above; many a combination of them; maybe none of them. The only certainty is that he wasn't the first sportsman and won't be the last to be momentarily driven by demons and forced to bear the consequences.

Although it was undoubtedly an indefensible act of stupidity, I'm inclined to not judge Rooney too harshly.

Yes, he is petulant; yes, he is explosive; yes, he is unpredictable. But we all know that, and it's just a part of the package that makes him such an exceptional footballer. Without his inner fire, he would be just another player, and if you want to embrace the highs, you must be prepared to accept the lows.

Eric Cantona was the same; so was Zidane; so was Diego Maradona, so was Romario; so was Hristo Stoichkov... the list could go on. The greatest players are often great because they are fuelled by levels of drive and desire that simply don't exist within ordinary people, and part of their DNA is an occasional, unavoidable tendency towards self-destruction. It comes with the territory.

On the whole, Rooney has done well to largely tame his inner fire in recent years. Friday night's was his second red card for England, following his infamous spat with then-clubmate Cristiano Ronaldo at the World Cup Finals five years ago, and he's not been sent off for Manchester United since a 2-0 defeat at Fulham in March 2009.

His outbursts have been controlled, and that's the best you can hope for because they will never be extinguished. It's just bad timing that this one could cost England so dearly.
