How to pick and drink sake 101

PARIS, Sept 27 — In an attempt to reverse flagging sales in its birthplace where sake is considered "an old man's drink," the Sake Sommelier Association is challenging adventurous gourmands to think outside the wine box and consider pairing the fermented rice wine with their French or Italian dinner.

Unlike wine, which boasts legions of professional and amateur fans decoding the age-old beverage, sake remains a bit of a mystery for Western consumers – something London-based sake sommelier Xavier Chapelou hopes to change.

Here's a primer on how to differentiate various types of sake, and why it works well with foie gras, duck confit and truffles:

There are more than 30 different types of sake, says Chapelou, but here are the main ones you'll find in liquor stores.

Honjozo Shiboritate: a fresh type of sake with a light palate and fragrant nose

Ginjo: Normally very floral, medium to rich-bodied sake

Junmai Daiginjo: Very fragrant nose with hint of exotic fruit. A usually full-bodied type of sake with a long finish

Nama Zake: Unpasteurised sake

Taru Zake: Aged sake in a cedar barrel

Nigori Zake: Cloudy, unfiltered sake

Happo shu: Sparkling sake

Koshu: Aged sake, often soft and mellow

Why it goes well with certain foods

Sake has a higher alcohol content than wine and is therefore more volatile, explains Chapelou. In the mouth, alcohol content evaporates more quickly, turning the drink into a kind of solvent. That in turn kickstarts a process known as retro-olfaction or retro-nasal, in which the nose and the mouth work in tandem to discern all the aromas of the sake and food.

Some of the common noses of sake include green apple, melon, peach, ripe banana, lychee and chestnuts, he says.

High levels of natural monosodium glutamate in sake also help enhance and concentrate the flavour profiles of foods rich in umami – the fifth sense which detects earthy, meaty flavours – like black truffle, ripe tomato, miso stock, and Parmesan. — AFP-Relaxnews

Sommeliers try to make sake fashionable with foie gras pairings

PARIS, Sept 27 — It could be construed as a tough idea to swallow, the notion of pairing rich French foods like duck confit and foie gras with Japanese rice wine.

But a group of sake sommeliers is challenging diners to throw out preconceptions about traditional food pairings and to consider the potent, national drink of Japan as an alternative dinner companion to wine.

In an interview with Relaxnews, Xavier Chapelou of the Sake Sommelier Association presents a compelling case for why sake makes for a harmonious companion to certain foods like foie gras, black truffle, Parmesan and ripe tomatoes.

It's a combination of its high alcohol content and elevated levels of natural monosodium glutamate, he explains, all of which help to boost and enhance the flavor profile of foods in the mouth.

Part of the hard sell, meanwhile, comes from a pressing strategy to promote sake in the face of flagging sales in Japan, where the drink suffers from an unfashionable and outmoded reputation.

"While sake is still the national drink of Japan, it's now considered an old man's drink," he said from London. "Consumption is declining because young people are drinking beer, cocktails and wine."

To reverse this trend, the association devised a strategy that taps into the Japanese consumer's love of all things European as well as the stock they put in medals, labels and seals, Chapelou said.

Reversing falling sake sales in Japan

This summer, a panel of sommeliers judged sake samples from breweries across Japan at luxury department store Harrods in London, where they bestowed 18 gold, 17 silver and 16 bronze medals at the London Sake Challenge, the first of its kind.

Award-winning bottles will bear the seals of approval which will serve as a buyer's guide for Japanese consumers faced with an ocean of sake choices. It's expected that this new purchasing tool will be highly successful, especially given how much the Japanese value rankings, labels and seals, Chapelou said.

Pairing sake with luxurious foods like foie gras and duck confit is also a deliberate strategy to elevate the beverage from its general reputation as an inexpensive apéro and post-meal type drink to an alcohol worthy of fine dining fare.

As Chapelou points out, it's not a huge stretch, given that celebrity chefs now feature sake on their menus -- like Heston Blumenthal on his menu at The Fat Duck – as do Michelin-starred London landmarks Le Gavroche and Club Gascon.

Dizzy Azarenka reaches Tokyo quarters

Posted: 26 Sep 2012 07:46 AM PDT

TOKYO, Sept 26 – World number one Victoria Azarenka recovered from a bout of dizziness to beat Italy's Roberta Vinci 6-4 6-2 and reach the quarter-finals of the Pan Pacific Open today.

Wrestling again with her service demons, second seed Maria Sharapova produced a laboured 6-2 7-6 victory over Czech Lucie Safarova to also reach the last eight in Tokyo.

Azarenka (picture) had her blood pressure checked during the changeover after going 4-3 down in the first set but somehow dug in to take it after Vinci dumped a forehand into the net.

"I felt dizzy on court and my head was spinning between points," said the Belarusian. "I was just trying to finish the points as quickly as possible."

Azarenka, who won this year's Australian Open and reached the US Open final earlier this month, found her feet again to race to a 4-0 lead in the second set.

Still looking flushed between points, Azarenka offered her opponent a glimmer of hope by dropping the next two games before slamming the door firmly shut.

A sliced backhand brought business to a quick conclusion, although Azarenka was still grimacing as she shook hands with Vinci and waved to the crowd.

"I arrived a few days before the tournament and really struggled with my health," said Azarenka. "I've been trying to save my energy for my matches."

"I don't know what exactly it is. Hopefully I'll know as soon as possible and get rid of it. I was pretty lucky. I don't know how I got through really."

French Open champion Sharapova finished with an ace but double-faults on big points almost cost the Russian the second set as the sun set over Tokyo Bay.

"After a long match yesterday, I was just happy to win in two (sets)," said Sharapova, who had taken more than three hours to dispatch British qualifier Heather Watson the previous day.

The two-times Pan Pacific Open champion was almost forced into a decider having blown a 3-0 lead in the set before winning the tiebreak 7-5.

FURIOUS REACTION

Sharapova almost choked in the breaker too, opening a 4-1 advantage before a wild forehand allowed Safarova to drew level, prompting a furious reaction from the Russian.

Muttering to herself angrily between points, Sharapova smacked her racquet against the court in disgust but held her nerve and had just enough in the tank to get the job done.

"After being up 3-0 I was frustrated," said the Olympic silver medallist, who served 14 double faults in her opener and six against Safarova.

"I don't think it should have gone to a tiebreak because I had the momentum going in the second set."

Sharapova next faces eighth seed Samantha Stosur of Australia in the WTA premier five event after last year's US Open champion beat Slovakia's Dominika Cibulkova 6-4 7-5.

Seventh seed Li Na, one of three Chinese players to travel to Tokyo despite escalating political tensions between China and Japan, was beaten 4-6 6-3 6-4 by Denmark's Caroline Wozniacki.

Former world number one Wozniacki next faces defending champion Agnieszka Radwanska, the third seed, who progressed with a 6-4 6-3 win over American qualifier Jamie Hampton.

Fifth seed Angelique Kerber played party pooper for the Radwanska family, however, overpowering Agnieszka's younger sister Urszula 6-1 6-1. Azarenka awaits the German.

Sixth seed Sara Errani ended the French resistance, overcoming ninth seed Marion Bartoli 3-6 6-2 6-2 to reach the last eight. – Reuters

PARIS, Sept 26 – Argos-Shimano, a team with a Japanese co-sponsor and rider, withdrew from cycling's Tour of Beijing today amid tensions between Japan and China over disputed islands in the South China Sea.

"Global Cycling Promotion and the local organising committee of the Tour of Beijing discussed with Team Argos-Shimano the option of not participating in the Tour of Beijing," the event's organisers said in a statement.

"Due to the current circumstances, the team accepted to withdraw from the race."

The Tour of Beijing would be held as scheduled from Oct. 9-13, the International Cycling Union (UCI) said.

"At this time, the current situation is not affecting the participation of any of the 18 World Tour teams and all are expected to be on the start line in Beijing on the 9th of October," UCI's Global Cycling Promotion director Alain Rumpf said.

"Of course the local organising committee and Global Cycling Promotion are closely following the evolution of the situation."

Earlier this month, Japanese cycling team Aisan were kicked out of the Tour of China.

Sino-Japanese relations deteriorated sharply this month after Japan bought the isolated East China Sea islands, called Senkaku in Japan and Diaoyu in China, from their private owner, sparking protests across China. – Reuters

SHANGHAI, Sept 26 — China will surpass the US as the country with the most number of skyscrapers in five years, according to a report in the Shanghai Daily.

By 2017, China will have 802 skyscraper structures compared with 539 in the US, according to a recent "Supercity" research report by China-based MotianCity, which conducts research on building structures. In 10 years, there are expected to be 1,318 skyscrapers on the mainland, compared with 563 in the US.

The US at present has the most skyscrapers in the world at 533, compared with 470 in China, excluding Hong Kong.

China is building 332 skyscrapers, with another 516 to be built in the near future. Among these are the 121-storey Shanghai Tower to be completed by 2015, and the 118-storey Ping An International Financial Centre in Shenzhen, expected to be completed by 2016.

Most future skyscrapers are expected to be built in major cities such as Shanghai and Beijing as well as the second and third-tier cities including Nanjing and Dongguan.

The US has only six skyscrapers under construction, and another 24 in the pipeline.

China's tallest building at present is the 101-storey Shanghai World Financial Centre, which is 492 metres tall, while the tallest tower in the US is Chicago's 108-storey Willis Tower, which measures 422 metres.

The world's tallest building is the 160-storey Burj Khalifa, which stands at 828 metres tall. — AFP/Relaxnews

Bond fund star Gundlach offers US$1.7m reward for stolen art

Posted: 26 Sep 2012 02:47 AM PDT

LOS ANGELES, Sept 26 — Superstar bond fund manager Jeffrey Gundlach, whose collections of art, pricey watches and fine wine were recently plundered by burglars, offered a new reward of up to US$1.7 million (RM5.2 million) for information leading to the safe return of 13 stolen works.

The overall value of the property taken from Gundlach's home in the coastal town of Santa Monica, near Los Angeles, two weeks ago was placed at more than US$10 million, including a red Porsche Carrera 4S sports car the thieves apparently drove away in.

But the bulk of the massive heist consisted of rare, one-of-a-kind works by contemporary painter Jasper Johns, who last year won the Presidential Medal of Freedom, the late Dutch abstract artist Piet Mondrian and several other artists.

At a news conference in Los Angeles, Gundlach said a US$200,000 reward initially offered for tips leading to the undamaged return of his art works remains in place.

But he posted a new US$1 million reward for a 1936 oil on canvas by Mondrian called "Composition (A) En Rouge Et Blanc", plus an additional US$500,000 for three works together — a 1956 Johns piece called "Green Target" and two wood-box collage works by Joseph Cornell, "Medici Princess" and "Pinturicchio Boy".

Anyone providing information resulting in the successful recovery of all 13 works, including pieces by Frank Stella, Franz Kline, Guy Rose, Philip Guston and Hanson Duvall Puthuff, would stand to receive the total reward of US$1.7 million.

Gundlach emphasised that rewards would only be paid if the works were returned undamaged.

He said he would take questions from the media, but abruptly left after declining to comment on the first three queries — was his property insured; did he have any suspicions about who was involved in the burglary; and was his house equipped with a security system.

A source familiar with arrangements told Reuters earlier the awards were not being offered with the intent of facilitating an arrest of anyone responsible for the burglary. The reward notice issued by Gundlach included the phrase, "No Questions Asked".

King of fixed income

An anonymous telephone tip line was set up in conjunction with the rewards at 855-692-4997, along with an anonymous online tip site at www.wetip.com.

In addition to the art works, police said thieves also got away with luxury watches made by the likes of Glashutte and Breitling, expensive bottles of wine, and a small amount of cash

The burglary occurred sometime between the afternoon of September 12 and the night of September 14, according to police. Gundlach was away on a trip at the time.

Santa Monica police Sergeant Henry Ramirez, a detective working on the case, told Reuters investigators had yet to identify any possible suspects in the burglary.

Asked whether police approved of the rewards posted by Gundlach and the manner in which they were offered, Ramirez said: "That's his own action, and we're separating ourselves from that because that's up to him."

Gundlach, the founder, CEO and chief investment officer of DoubleLine Capital, is regarded in the financial industry as the new king of the fixed-income world with US$45 billion in assets under management.

He made headlines on Wall Street a year ago when he emerged victorious in a court battle with TCW Group Inc, the asset management firm that fired him in December 2009.

A Los Angeles jury found him liable for breach of fiduciary duty as well as taking trade secrets and interfering with the contracts of TCW clients, but Gundlach walked away unscathed as the jurors declined to award any damages.

He also won an unpaid wages claim of US$66.7 million against TCW. — Reuters

Singer Andy Williams dies at age 84

BRANSON, Missouri, Sept 26 — Crooner Andy Williams has died at age 84 at his home in Branson, Missouri, his family said today.

Williams, who had been suffering from bladder cancer for a year, died yesterday evening, his family said in a statement.

Known for his hit renditions of "Moon River" and "Born Free", Williams hosted "The Andy Williams Show" on NBC for nearly a decade. The show then became an annual Christmas special.

Williams became entangled in a scandal when his ex-wife Claudine Longet was accused in 1976 of fatally shooting her lover, ski racer Spider Sabich.

The singer announced last year at an appearance at the Moon River Theatre in Branson that he was suffering from cancer.

Williams, who grew up in Wall Lake, Iowa, made his professional singing debut at age 8 with his three brothers as part of the Williams Brothers Quartet.

Featured on radio stations nationwide, the brothers eventually drew the attention of Bing Crosby, who joined them to record the 1944 hit "Swinging on a Star". — Reuters

Potter author steps into unknown with adult debut

Posted: 26 Sep 2012 06:59 AM PDT

LONDON, Sept 26 — J.K. Rowling takes a step into the unknown tomorrow with the publication of her debut adult novel, five years after the seventh and final instalment of the Harry Potter series became the fastest-selling book in history.

"The Casual Vacancy" is virtually guaranteed to top the bestseller lists in Britain, the United States and beyond, with Rowling's name enough to attract millions of buyers and give publishers and book stores a much-needed boost.

Yet even that may feel something of an anti-climax for an author who has re-written the rules of publishing and generated the kind of media hype and public hysteria normally reserved for Hollywood royalty.

As each Harry Potter instalment hit the shelves, hundreds of thousands of fans dressed up as wizards and witches and queued outside book stores from Toronto to Tokyo, and the sales figures were staggering — 450 million copies and counting.

The 47-year-old Briton said she was looking forward to a more subdued book launch this time around.

"As much as is possible I wanted this to be a normal book publication," she told USA Today in one of a handful of newspaper interviews she gave to promote the novel.

"Some of the furore that surrounded a Harry Potter publication was fun. I always loved meeting readers. I always loved doing events where I got to speak to readers, but some of it, candidly, wasn't fun at all.

"The thing took on a life of its own. Some of it was just sheer insanity, and I couldn't control it. I couldn't stop it. I couldn't rein it in. Incredible as it is to look back on it, I'm never going to be chasing that again."

That "insanity" may explain why the run-up to the publication of her story about a small town in southwest England where class prejudices are laid bare has been so low-key.

"The Casual Vacancy", published by Hachette Livre division Little, Brown, has attracted press coverage that most authors could only dream of, but Rowling plans only a few appearances, including one in London on publication day.

Poverty, snobbism

"The Casual Vacancy" has been described by the New Yorker magazine as a "rural comedy of manners that, having taken on state-of-the-nation social themes, builds into black melodrama".

Its starting point is the unexpected death of Barry Fairbrother, but it segues into a story about tensions between the well-off inhabitants and their poorer neighbours living on a nearby housing estate.

For Rowling, who was a single mother living on state benefits when she first started writing the Potter stories, the theme of poverty and class prejudice was particularly important.

"The poor are discussed as this homogeneous mash, like porridge," she told the Guardian newspaper. "The idea that they might be individuals, and be where they are for very different, diverse reasons, again seems to escape some people."

Since those hard times, she has become what Forbes magazine called the world's "first billionaire author", both from book sales and her cut of the record-breaking, eight-part Harry Potter movie franchise.

As befits a literary A-lister, "The Casual Vacancy" has been kept under close wraps, and the Guardian stated, "Even the publishers have been forbidden to read it".

That was swiftly denied by Hachette, although a spokeswoman added that only those "closely involved" with the book had read it and it had not been "widely circulated in-house".

Rowling said she was proud of her first foray into adult fiction and had enjoyed the "sheer freedom" of the past five years since she closed the Potter saga.

If readers and critics turn out not to like it, she said "I can live with that".

Rowling has confirmed that her next book is most likely to be a novel for children, which is almost complete. She is also contemplating a "director's cut" of two Potter novels because she had been in such a rush to finish them. — Reuters

Rice asks for fan feedback on Lestat’s return

Posted: 26 Sep 2012 09:17 AM PDT

LOS ANGELES, Sept 26 – Legendary vampire Lestat could be in for a return, as author Anne Rice (Interview with a Vampire) took to her Facebook page to ask fans a simple but revealing question: "If you want Lestat to come back, can you tell me why in one sentence?"

Equally, change could be in the cards, as Rice further quizzed her followers, asking: "In one sentence, what one thing do you NOT like about Lestat?"

Rice (picture) followed Sunday's inquiries with a later post today, September 26, likening TV series Hell on Wheels' main character Cullen Bohannon (and actor Anson Mount) to "Lestat in the Wild West."

The musings may seem nondescript, but Lestat's Vampire Chronicles series has been on hiatus for nearly a decade since Blood Canticle in 2003, and though Rice's 2012 novel The Wolf Gift centred around a werewolf phenomenon, Rice characterised it as having a mystical rather than supernatural theme.

It is true that filmmaker Ron Howard's production company has optioned the fourth Vampire Chronicles book, so perhaps it's that to which Rice is referring and, if so, Anson Mount could be in for a major role.

Since Lestat's last outing, Twilight fever has established itself as a watermark for popular supernatural fiction, with film stars Robert Pattinson, Kristen Stewart and Taylor Lautner enjoying considerable exposure, while the Fifty Shades trilogy started as Twilight fan fantasy before spurring a rise in erotic fiction – Rice's own dabblings with that particular sub-genre came in the 1980s, before her return to Christianity early this century.

Sex, drugs and village politics in Potter author’s new novel

Posted: 26 Sep 2012 12:24 AM PDT

LONDON, Sept 26 — Harry Potter author JK Rowling bids goodbye to the boy wizard tomorrow when she releases her first novel for adults, a gritty tale of poverty and politics in an idyllic English village.

With more than 450 million copies of the Potter books sold and fans feverishly excited about the British author's first major work since 2007, her new black comedy, titled "The Casual Vacancy", is already a guaranteed success.

Pre-order sales have reportedly topped a million copies and British booksellers expect it to be the best-selling fiction title of the year.

"It's one of the biggest releases of the 21st century," Philip Stone, charts editor at The Bookseller magazine, told AFP.

"I think 99.9 per cent of us (in the industry) are predicting it will go straight to number one."

And as the world's first billionaire author, 47-year-old Rowling has the luxury of not needing to worry about paying the bills if her first foray into "grown-up" fiction is panned by the critics.

"I am the freest author in the world. I can do whatever the hell I like," she told Britain's Guardian newspaper.

"If everyone says, 'Well, that's shockingly bad — back to wizards with you', then obviously I won't be throwing a party. But I will live."

Rowling's publisher Little, Brown has released some details of the plot, while a few more have emerged from the few journalists allowed advance access to the book, under tight security reminiscent of the height of Pottermania.

Set in the fictional village of Pagford in southwest England, the story opens with the death of a member of the local parish council.

Middle-class villagers soon begin plotting to fill the vacant seat with someone sympathetic to their cause — ridding Pagford of its responsibility for the Fields, a squalid housing estate.

"We're a phenomenally snobby society," Rowling told the Guardian, "and it's such a rich seam. The middle class is so funny."

Tackling themes including heroin addiction, prostitution, single parenthood and adolescent lust, the book is a radical departure from the sanitised fantasy of her seven novels pitting teenage wizards against the evil Lord Voldemort.

Rowling said she had been itching to cover more adult topics.

"There are certain things you just don't do in fantasy," she told the New Yorker magazine. "You don't have sex near unicorns. It's an iron-clad rule. It's tacky."

Today, Joanne Rowling is a glamorous blonde with palatial homes in Edinburgh and London.

She is worth £560 million (RM2.8 billion) according to the Sunday Times Rich List, with a business empire spanning eight blockbuster films, theme parks, toys and videogames.

But in the early 1990s she was battling depression and surviving on state handouts, struggling to raise her daughter alone as she wrote the first Potter novel in Edinburgh cafes.

Her experience of poverty and lone parenthood, following the breakdown of her short, disastrous marriage to a Portuguese journalist, was one influence on the plot of "The Casual Vacancy".

The book was also partly inspired by her youth, spent in villages similar to Pagford.

"This was very much me vividly remembering what it was like to be a teenager, and it wasn't a particularly happy time in my life," Rowling told the Guardian.

Her mother was diagnosed with multiple sclerosis when Rowling was 15 and she had a difficult relationship with her father — the two have not spoken for around nine years.

These days, she can bring up her own three children — she has two more with second husband Neil Murray, a doctor whom she married in 2001 — in the utmost comfort.

But she insists that with money and fame, her problems have changed, rather than evaporated altogether.

"I am so grateful for what happened that this should not be taken in any way as a whine, but you don't expect the pressure of it," she told the Guardian.

Giving evidence to an inquiry into press ethics last November, she blasted the British press for invading her children's privacy.

Rowling is currently working on two more books for young children.

Where she goes from there may depend on her mode of transport -- Harry Potter was dreamed up on a train, while the idea for "The Casual Vacancy" struck her while she was on a plane.

"Obviously I need to be in some form of vehicle to have a decent idea," she has said. — AFP-Relaxnews

Nobody loves you, Syria

Posted: 25 Sep 2012 04:29 PM PDT

SEPT 26 ― I had mixed feelings about last week's demonstrations. While I support demonstrations as a necessary and democratic right, the political spectacle surrounding these was off-putting to say the least.

Not to mention, why target the US embassy? It's not like US President Barack Obama decided to fund the regrettable trailer that sparked off an international furore.

There was another embassy I wish I could see people milling around: the Syrian embassy. It boggles the mind that Malaysia has said little about the ongoing conflict. Are we just waiting to see who takes the other out first? Are we quietly deluding ourselves that things will blow over the way they did in Egypt and Libya?

According to the UN food agency, there are now 1.5 million Syrians in need of food aid — up from 250,000 in April.

Malaysians consistently obsess over Palestine. They poured forth offers of shelter to the Bosnians. So many of them cluttered my Facebook and Twitter feeds about the Rohingyas in Myanmar.

But Syria? Is its people's suffering less worthy as the threat is internal and not via "foreign" invaders?

A check on my Facebook account revealed a few Malaysians have created Facebook groups highlighting the Syria conflict, but those groups have fewer than 50 followers each.

Perhaps part of it is due to the sensationalism that pervades our local media. Syria, after all, is boring compared to angry faithful attacking embassies.

It's great that God has so many defenders and I'm sure the world has gotten whatever point you were trying to make.

Now perhaps spare a thought or a prayer for Syria. Because it's no movie going on over there; it's real people dying while the United Nations wrings its hands, stymied by a Security Council divided and countries like Malaysia who have simply decided not to care.
