A dream Christmas dinner at The Restaurant

Tuna Carpaccio Marinade with Spiced Oil, Whole Tomato Mousse, Tomato Salsa and Grilled Octopus.Tuna Carpaccio Marinade with Spiced Oil, Whole Tomato Mousse, Tomato Salsa and Grilled Octopus.Next, the Tuna Carpaccio Marinated with Spiced Oil, White Tomato Mousse, Tomato Salsa and Grilled Octopus picked up the momentum.

I have heard such a good account of executive chef Alexander Waschl before I went to The Restaurant, and his culinary artistry already showed in this platter of many components but which all came together brilliantly.

There was the silky tuna carpaccio with a little heat from the spiced oil, the complex grilled octopus, the tart and sweet tomato salsa, the fragrant pesto and the two blobs of white tomato mousse that I had mistaken for daikon at first.

I loved the trembly tomato mousse, with its sweet essence derived from tomato water and whipped up with gelatine.

We were dining on the set dinner menu for Christmas Eve and Christmas Day. It's a refined one that dances from fish to chicken to lamb, then duck or salmon.

Double-boiled Chicken Consomme, Rosemary Semolina Dumpling, Slow Poached Foie Gras on Chicken Ragout.Double-boiled Chicken Consomme, Rosemary Semolina Dumpling, Slow Poached Foie Gras on Chicken Ragout.I always look forward to a good consommé, and was content with the Double-boiled Chicken Consomme, Rosemary Semolina Dumpling and Slow Poached Foie Gras on Chicken Ragout.

A wonderful aroma wafted up as the consommé was served, it had depth and yet was delicate. The tender rosemary-infused dumplings broke up at the bite. The poached foie gras with chicken ragout was creamy and lovely.

The various vegetables on top of the Braised Lamb Shoulder with Vegetable Sauce and Truffle Onion Wantan, had us guessing what they were. The chef told us later – purple and yellow heirloom carrots which had been confit in lamb fat, concentrating their sweetness. No wonder they tasted so good.

Medium Roasted Lamb Shoulder with Vegetable Sauce, Truffle Onion Wantan.Medium Roasted Lamb Shoulder with Vegetable Sauce, Truffle Onion Wantan. The lamb had been braised with the normal carrot and celery, with leeks. The sauce was superb. The Truffle Onion Wantan was a surprising but amazing element on the plate.

The Passionfruit Sorbet with Passionfruit Sauce and Yoghurt was delightful, with the intense sweetness and tartness of passionfruit balanced with the mild yoghurt.

The chef decided to have duck, not turkey for the Christmas menu, and we had the Oven-roasted Christmas Duck served as breast and leg, Orange Gravy, Chanterelle Bread Dumplings and Braised Red Cabbage.

It was the classic duck a l'orange, but done in the chef's alternative style. The duck marination had star anise, fennel seeds and pimento in it. It was so good – the tender, juicy duck breast with the scent of Christmas spices, and touched with the gorgeous orange sauce.

The duck leg had been almost confit, said the chef, the duck fat rendering the skin crispy and the meat almost falling off the bone.

There were sweet apple and braised cabbage, and the chanterelle dumplings that looked like tofu but every bite is filled with earthy chanterelles.

Smoked Salmon with Spice Fennel Frond, Saffron Potato, Tomato, Crabmeat and Mussel.Smoked Salmon with Spice Fennel Frond, Saffron Potato, Tomato, Crabmeat and Mussel. There was Smoked Salmon with Spice Fennel Frond, Saffron Potato, Tomato, Crabmeat and Mussel for the other main course.

The salmon had been cold smoked with hickory, and it had this significant smoky lift which was so pleasing.

A knob of luscious crabmeat, a mussel, potato in a saffron soup, the fennel frond and Christmas spices, as the chef called them, added layers of flavours to the salmon.

Christmas Pudding with Vanilla Sauce.Christmas Pudding with Vanilla Sauce. The pre-dessert was the Christmas Pudding with Vanilla Sauce, just a thin slice of it, packed with dried fruits, nuts, spice and heady hints. It was truly sublime, but even then the chef deemed it too early to be served, maturing only at Christmas.

The Chocolate Brownie with Christmas Pear Mousse and Jelly, Champagne Pear Sorbet and Poached Pear was exquisite.

I loved how the chef played around with different forms of the same main ingredient, resulting in a mélange of divine textures and flavours.

Sherwood thinks he is the man to manage Tottenham

Posted: 20 Dec 2013 07:42 AM PST

December 20, 2013

Tim Sherwood (pic) staked his claim to be Tottenham Hotspur's next manager on Friday as he prepared for his second match in temporary charge since Andre Villas-Boas was sacked this week.

The former Spurs midfielder, who has been involved with coaching the club's young players since 2008, was put in control of the first team for Wednesday's League Cup defeat by West Ham United and will take the side to Southampton on Sunday.

What chairman Daniel Levy has in mind for the north London club is unclear, however, with Sherwood saying he has yet to talk about his future.

At a news conference on Friday, however, the 44-year-old Sherwood was in confident mood.

"I know all about the football club. I've played here. It is my club," he told reporters. "I know what the supporters want and I know what they demand. I know the players. I know the good young talent that's coming through the club.

"The club and the manager have to be compatible. It's not always about the biggest name. You might do well at another club, but you might not do well at this one.

"If it were down to me I'm getting a 10-year contract now, but football doesn't work like that. It's all about getting results."

Sherwood, who captained Blackburn Rovers to the Premier League title in 1995, admitted that he would not want to work as an assistant to a new manager and that he must consider whether the role was right for him in the long-term.

"Not for me, to be honest. I wouldn't want that," he said.

"I need to talk about philosophies, what are we looking to do. Are we looking to buy players, or are we looking to bring them through? All these have to be taken into consideration when I decide whether it is right for me or not.

"It's up to the chairman and the board to make the correct decision that's right for the long-term future of the club as it's not good to keep changing managers.

"I listen to managers all the time talking about 'the project'. The project is you win games or you get sacked - end of story."

Sherwood's short-term focus is reviving the club's faltering season at the start of a hectic Christmas schedule.

Seventh-placed Spurs are only five points behind the top four, but last week's 5-0 home drubbing by Liverpool and last month's 6-0 thrashing at Manchester City have eroded confidence.

"It's going to be a tough game down there. We know what to expect from Southampton," Sherwood said. "He (Southampton coach Mauricio Pochettino) has got his team playing a high-press game with a quick tempo." - Reuters, December 20, 2013.

Djokovic call surprised me, says Becker

Posted: 20 Dec 2013 07:09 AM PST

December 20, 2013

Boris Becker (pic) said Novak Djokovic approached him to become his head coach the day the Serb lost the world No.1 ranking to Spaniard Rafa Nadal in October this year.

Djokovic's announcement this week that the German six-times grand slam champion was to become his coach was greeted with surprise and Becker said it had been unexpected.

"I was approached by Novak and his manager while he was playing in Beijing," London-based Becker told BBC Sport on Friday. "He decided he needed somebody in his corner that had been there and done it.

"I was surprised. I didn't expect the phone call. I was honoured."

Marian Vajda, who has been 26-year-old Djokovic's coach for each of his six grand slam titles, will continue as part of the team, but Becker is set to assume head coach responsibilities at the forthcoming Australian Open which starts on January 13.

It will be Becker's first foray into coaching a top-level player and he said he would put 100% into it.

"This isn't a half-hearted job. It wouldn't be right for him or for me," Becker said. "You're in it to win it. You either go at it fully or you don't. Either I commit myself or I don't commit myself."

Becker joins another former world No.1 and multiple grand slam winner Ivan Lendl in the coaching circle after the Czech-born American teamed up with Andy Murray at the start of 2012 and has since guided the British player to two major titles.

"When Ivan was appointed, I thought about what took some of these guys so long to talk about some of these all-time greats (as coaches)," said Becker.

"There was a generation that changed tennis and the way we played in the 1980s is not that different to how we're playing today." - Reuters, December 20, 2013.

Kenyah seamstress finds niche in Bidayuh costumes

Posted: 19 Dec 2013 11:10 PM PST

December 20, 2013

At a corner of a small wooden "bundle" shop in Bau town, a petite, fair-skinned woman was seen busy sewing.

She is a seamstress, who makes a living sewing and selling Bidayuh traditional costumes in Bau, about 40km from Kuching.

However, Ludia Apoi herself is not Bidayuh. She is of Kenyah descent (a sub-group of the Orang Ulu people) and hails from Long Banga, Baram.

When asked why Ludia chose to make traditional Bidayuh costumes over Orang Ulu costumes, she said it was because of marketability, time and the costume's elaborateness.

"The Orang Ulu traditional costume is more elaborate and requires more time to complete. I am also running my business in a Bidayuh-majority area, so the market for Orang Ulu costumes is limited."

Ludia said as the traditional Bidayuh costume was easier to make, she was able to complete at least 18 costumes a month.

Each Bidayuh community had its own traditional costume that differed slightly from the other, especially in colour.

"Although I make more traditional costumes for the Bidayuh from Bau, I am also taking orders for those from other areas. If they provide samples, that makes my job easier."

A traditional Bidayuh costume set for women comprises a short-sleeved or sleeveless blouse, jomuh (skirt), and matching accessories such as selapai (sash), pangiah (bead necklace), porik (copper/ metal belt) and sipiah (headgear).

The men wear a tawuop or tahup (long loin cloth wrapped around the body with one end hanging in front and the other in the back), the burang sumba (headgear) and occasionally, kima (armlet).

Although there were quite a number of tailors specialising in traditional Bidayuh costumes in Bau, few make the complete set as Ludia does.

"Some only make the clothes and headgear, but not the accessories."

She said the ability to make the accessories gives her an edge over her competitors.

"I have always been interested in sewing, but only had the opportunity to learn it during a course held at the Suarah Bau Hall in 2000," said Ludia, who has been living in Bau since her marriage in 1993.

The mother of four said the six-month course was beneficial, as she was able to sew well enough afterwards to earn a living.

"At first, I worked from my home in Kampung Belimbing. I accepted orders for traditional Bidayuh costumes, baju kurung and baju kebaya from nearby residents. Eventually my business grew and I moved to a shop."

Husband Libek Jonny is proud and impressed with her ability to make the traditional Bidayuh costume.

"I think it is an inborn talent, although it manifested itself rather late," said the 48-year-old teacher.

He said he supported his wife's endeavour by helping her source materials to make the costumes such as cloth, beads and threads from Kuching. – Bernama, December 20, 2013.

For pre-diabetics, just 2,000 steps a day cuts heart attack risk

Posted: 19 Dec 2013 06:52 PM PST

December 20, 2013

Walk an extra 2,000 steps a day and cut your risk of having a heart attack or stroke, scientists say.Walk an extra 2,000 steps a day and cut your risk of having a heart attack or stroke, scientists say.People who are already on the way to developing diabetes could significantly reduce their risk of having a heart attack or stroke by walking for just an extra 20 minutes a day for a year, scientists said today.

A large international study of people with a condition called impaired glucose tolerance (IGT) - a precursor to diabetes - found that taking an extra 2,000 steps a day over one year cut the risk of serious heart illness by 8%.

IGT affects around 344 million people worldwide, or almost 8% of adults, and this number is projected to rise to 472 million by 2030 as populations grow and age and unhealthy diets contribute to increasing rates of diabetes.

"People with IGT have a greatly increased risk of cardiovascular disease," said Thomas Yates of Britain's University of Leicester, who led the research.

"While several studies have suggested that physical activity is beneficially linked to health in those with IGT, this is the first study to specifically quantify the extent to which change in walking behaviour can modify the risk of heart disease, stroke, and cardiovascular-related deaths."

Yates's team took data from a trial covering more than 9,300 adults in 40 countries who had IGT and heart disease or at least one cardiovascular risk factor.

All the participants were given a lifestyle change programme aimed at helping them lose weight and cut fat intake while increasing physical activity to 150 minutes a week. Using a pedometer, researchers recorded usual walking activity over a week both at the start of the study and again 12 months later.

After adjusting for a wide range of confounding factors including body mass index, smoking, diet and use of medication, the researchers used statistical modelling to test the relationship between the number of steps taken a day and the risk of subsequent heart disease.

They found that for every 2,000 additional steps a day the start of the study there was a 10% reduction in risk of heart disease.

On top of this, the risk of heart disease and so-called cardiovascular events like heart attacks and strokes was further reduced by 8% for every extra 2,000 steps a day between the start of the study and 12 months later.

"These findings provide the strongest evidence yet for the importance of physical activity in high risk populations and will inform diabetes and cardiovascular disease prevention programmes worldwide," said Yates.

"Changing physical activity levels through simply increasing the number of steps taken can substantially reduce the risk of cardiovascular disease," he added, noting that the benefits of extra walking showed up regardless of a person's bodyweight or the level of activity they started at. - Reuters, December 20, 2013.

Disney explores own history in magical filmmaking tale

Posted: 19 Dec 2013 10:08 PM PST

December 20, 2013

Tom Hanks plays Walt Disney, who used all his sunny Californian charms to persuade writer P.L. Travers, played by Emma Thompson, to allow him to use the story.

The movie, released in The United States today, is tipped as a serious contender for the Oscars, having already won Golden Globe and Screen Actors Guild (SAG) nominations for Thompson.

Directed by John Lee Hancock ("The Blind Side", "The Alamo", "A Perfect World"), the film recounts the two weeks Travers spent in 1961 at Disney Studios, where Walt battled to win her consent for his whimsical adaptation of her work.

Australian-born Helen Lyndon Goff, who changed her name to P.L. Travers after moving to Britain – a nation whose starchy national stereotype she came to embody – began writing her Mary Poppins stories in 1934.

For two decades Disney had been trying to secure the rights to her tale about an English nanny who floats into a family's home with the help of a magic umbrella.

Disney had nonetheless already begun the film, and invited Travers to come and work with the screenwriter and composers Robert and Richard Sherman, hoping to win her confidence – never imagining how hostile she could be.

To prepare for the role, Thompson studied everything about Travers.

"Around some corners, you'd find this terrible monster. And around other corners, you'd find a beaten child. She was the most extraordinary combination of things," Thompson told a pre-release press conference in Beverly Hills.

"I suppose that was the scary thing. In films, we often get to play people who are emotionally, or at least morally, consistent, in some way, and she wasn't consistent, in any way.

"You would not know what you would get, from one moment to the next."

The movie is constructed around repeated flashbacks to Travers's childhood in Australia, marked by boundless admiration for her father, a day-dreaming bank manager and chronic alcoholic whose first name was Travers.

"Every time Travers appears on screen... you are seeing a particular stage of his development which is actually a particular stage of his disintegration," said Colin Farrell, who plays the paternal but immature character.

"It felt to me that he was somebody who is married with three children and has all the responsibilities that come with that, but emotionally, he has never been able to leave his childhood behind," he told AFP.

The film doesn't claim to depict a historically exact account of events. But it is based on memories of Disney veterans, notably in creating the unforgettable tunes for the 1964 film "Mary Poppins" starring Julie Andrews.

Richard Sherman, the sole survivor of the musical duo behind the score, was "literally a never-ending fountain of stories, of facts, of anecdotes, and of bits and pieces of everything that had happened," said Hanks.

The actor, who is also a producer, said the new film is a perfect illustration of the ruthlessness a filmmaker must sometimes have to exert in order to get a project completed.

"At this point, Walt Disney was pretty much used to getting his way because everybody loved him and he was the guy who invented Mickey Mouse," he told reporters.

"In the creative process, which is really what this movie is about, you come to loggerheads and you just have to keep the process moving forward, even if that requires jumping on a plane and flying to London.

"It's a good thing. It's fun, otherwise it would be too much work," he added.

Thompson said she was sure what Travers would have thought of "Savings Mr. Banks".

"I think what she would say about this is 'This is an absolutely ridiculous film! It has no relationship, whatsoever, to what was happening. But, it's about me. And the clothes were really rather nice'." - AFP, December 20, 2013.

Actor Paul Rudd to star as ‘Ant-Man’, Marvel action hero

Marvel said the choice of Rudd, 44, reflected the studio's desire "to cast actors that bring several dimensions to its onscreen heroes".

Rudd is a staple in the comic films from director Judd Apatow, such as "The 40-Year-Old Virgin", and is currently in theatres in news anchor send-up "Anchorman 2: The Legend of Ron Burgundy".

The studio said in a statement that the plot is being kept under wraps. But in Marvel Comics, Ant-Man is a scientist who invents a substance that allows him to shrink his size and communicate with insects.

The film, to be directed by Edgar Wright, is scheduled for release in mid-2015.

Walt Disney Co. bought Marvel in 2009 for $4.3 billion (RM14.07 billion). The studio is behind some of the most successful films of recent years, including the "Iron Man", "Avengers" and "Thor" franchises. - Reuters, December 20, 2013.

A good year for screen readers – notable eBooks of 2013

Posted: 19 Dec 2013 03:44 PM PST

BY ZOE SADOKIERSKI
December 20, 2013

Serialised eBook chapters force us to make time to read. - The Conversation pic, December 20, 2013.Serialised eBook chapters force us to make time to read. - The Conversation pic, December 20, 2013.I've nominated these eBooks as notable publications in 2013 based on three criteria. First, I enjoyed reading them enough to finish the whole text on a digital device. Second, they use the digital format to do something that print cannot. Third, the typographic and interactive elements have enhanced my reading experience rather than distracted me from the narrative.

As an iPhone and iPad owner, my selections are Apple specific.

1. The Silent History

Co-written by Eli Horowitz, Kevin Moffett, Matthew Derby and Russell Quinn. Published by Ying Horwitz & Quinn

Written and designed specifically for iPads and iPhones, "The Silent History" is notable because it uses its digital format to push the boundaries of what a novel is. Technically, the book was published in 2012, but chapters were released in serialised format – one a day – between October 1, 2012, and April 19, 2013.

The central narrative describes a phenomenon where a growing number of children born in the early 21st century are silent – they have no capacity for speech, no visible comprehension or social interaction with their parents or other children. The narrative is structured as a series of oral history "testimonials", written in first person by characters who come in contact with these children: parents, teachers, doctors, government officials and even cult leaders and faith healers. The story spans three decades, looking at the personal, social and cultural impact of this silent phenomenon from multiple perspectives.

To read the book, you first need to download the app, which is A$1.99 (RM5.77). It comes comes with Volume One (the first 20 chapters), plus an introduction, prologue and extra audio-visual material that establishes the fictional world, pre-loaded. The remaining five volumes (100 chapters) can be purchased for A$8.49 from within the app.

This format is similar to how magazine subscriptions are being released for digital Readers: an app is downloaded onto the reading device (in this case, only an iPhone or iPad), then new issues are made available as in-app purchases. This means that the app icon on your Reader becomes a portal to collect all future issues or chapters in the one spot, without having to go back to the iTunes store or other shopfront (such as Amazon).

A serialised release also allows readers to try before you buy. In this case, a A$1.99 commitment before paying the full amount, which still comes in under A$12.

I discovered the book in January and after reading the first chapters and watching the video content – which is artfully produced, convincingly setting up the fictional world and demonstrating how to interact with the interface of the novel – I immediately purchased the rest of the book.

Once I caught up with the serialised releases, waiting for new chapters was as frustrating as watching an engaging television series live. The serialised format also altered my reading practice. I was forced not only to wait, but to reflect on my impatience, and challenged to set aside daily time to keep reading.

Fortunately for other impatient people, now that the entire publication has been released, you can access it all at once.

It's worth noting that many early novels were first published in serialised form, printed in weekly instalments. This was a format borrowed from non-fiction publishing of the time, but embraced by the likes of Charles Dickens, whose novel "The Pickwick Papers" was written with this publishing model in mind, between April 1836 and November 1837.

Serialised publishing allowed Dickens and other authors to listen and respond to readers' responses on their work, and alter the plot developments accordingly. Many authors may baulk at this intrusion on the creative process, but in 2012 Amazon picked up on the idea, releasing a series of serialised short stories for the Kindle.

Although the authors of "The Silent History" did not, as far as I know, allow reader response to influence the plot development, they did build in a participatory element.

A selection of several hundred "Field Reports" can also be accessed when a reader physically stands in a location on a map and uses the GPS on the phone/iPad to tap into site specific photographs and written "reports".

These bonus reports are written by the authors and invited contributors, but also by enthusiastic readers, including several Australian contributions. I didn't engage with this aspect of the book, but I can see how it would appeal to others.

2. Gimbal

Multiple authors, published by Toru Interactive

"Gimbal" is a short story anthology designed for commuters that allows readers to choose a short story in several ways: set in a city they'd like to visit; set on a mode of transport; by genre; or, by the duration of their daily journey.

Alternatively, an audio recording of the story can be downloaded, with an interactive map that points out key locations from the city that appear in the story.

The stories contained within the app come from two literary projects. Literature Across Frontiers' "Tramlines" project paired writers from different cities, inviting them to explore each others home town via tram travel and write stories based on the experience.

Comma Press' "Reading the City" is an ongoing anthology series exploring "new ways for fictional narratives and urban landscapes interact", with stories from more than 50 cities around the world.

The quality and diversity of the writing, coupled with the option to select stories based on how long I have to read, makes this anthology notable. However, the interactive map and audio elements are less impressive than other apps I've seen (in particular, the SoHo stories audio map is incredible, and worthy of a future column post).

3. Interaction of Color

Written and illustrated by Joseph Albers, adapted for the iPad by Yale

Teacher, painter and colour theorist Joseph Albers published "Interaction of Color" in 1963. A pioneer of 20th Century modernism, Albers book remains a classic text for art and design students.

To celebrate the book's 50th anniversary, Yale University Press released a new paperback and the digital edition, to complement a 2009 hardback edition. The hardback – beautifully produced with a slipcase 145 colour illustrations – retails at A$250. The app costs A$10.99 for the entire text, images and additional audio-visual commentary and interactive material. Santa, please note that I still want both.

The digital edition contains the entire text and the illustrated plates from the original book. The text includes tap-able "hotspots" over key terms that pull up a definition, and thumbnails of images so you can easily toggle between the illustrated plate and text.

There is also video commentary from prominent designers, scholars and artists discussing the importance of colour in the creative process, and archival audio and video of Josef Albers talking through special exercises.

The digital edition is playful, intuitive and no doubt appealing to an audience who grew up tapping screens more than turning pages. It is also a more affordable option for students and educators than the print edition, though obviously having a copy of both would be ideal to demonstrate the differences between colour on page and screen.

Video overview introducing colour as an element of design practice, and the relevance of Albers' book to a contemporary audience.

There is incredible innovation happening in the digital realm, and I have omitted many excellent publications that I enjoyed this year but I will save discussion of those for future posts in my column. - The Conversation, December 20, 2013.

Pakar-pakar ekonomi, tolong jangan jadi ‘Pak Karut’ kerajaan

Posted: 19 Dec 2013 06:53 PM PST

December 20, 2013

Dr Dzulkefly Ahmad is a member of the PAS central working committee and ex-MP of Kuala Selangor.

Bertindaklah mengikut tuntutan maklumat berdasarkan kajian sebenar para 'analysts'.

– 20 Disember, 2013.

Malaysia memperkecilkan kematian Mandela?

Posted: 19 Dec 2013 03:18 PM PST

December 20, 2013

– 20 Disember, 2013.

Adnan kesal pihak tertentu politikkan kejadian banjir

Posted: 20 Dec 2013 03:07 AM PST

December 20, 2013

- Bernama, 20 Disember, 2013.
