Anna Olson: Up close and (quite) personal

Posted: 25 Nov 2012 04:49 PM PST

KUALA LUMPUR, Nov 26 — Here are some things you probably don't know about TV celebrity chef Anna Olson: known for "Bake with Anna Olson", "Sugar" and "Fresh with Anna Olson" on the Asian Food Channel, she prefers savoury to sweet even though she is so often associated with desserts AND her absolute favourite thing to eat is beef. In all forms.

She prefers serving beef for Christmas rather than turkey. Also, during Thanksgiving, she would serve seafood instead of turkey.

Olson also makes kaya from scratch back home in Canada!

Yes, she was talking to a bunch of us media people in Kuala Lumpur recently at a cooking demonstration at the Berjaya University College of Hospitality called "Fresh Flavours with Anna Olson".

And she was charming us with all sorts of snippets about cooking, baking, what does on behind the scenes of her show and so on.

Having just landed in Malaysia an hour before the demonstration, she showed no signs of jet lag but was engaging and bubbly throughout the entire time.

"This is my third visit to Malaysia and there are so many things I want to see, eat and buy for everyone back home," she said enthusiastically as she greeted us. "I'm looking forward to the spicy flavours in Malaysia such as nasi lemak and local desserts such as kuih lapis."

Her schedule is packed to the brim this time around: back-to-back cooking demonstrations, sampling dinners as well as classes for the Berjaya University College of Hospitality students. She then leaves for Singapore where it is the same thing again, more cooking demonstrations, sampling dinners. Yes, it's a bit of a rinse and repeat.

"Baking is a science," Anna Olson tells guests.

So what is it like cooking for work and cooking for home?

"For work, it is all about testing and tasting. It is all very analytical. But when I cook at home, it is more relaxing. My mind switches off after working hours so there is less thinking involved when I cook for home," said Olson.

At the cooking demonstration, she taught us how to make Tourtiere, a French Canadian Beef Pie that is similar to the British steak and kidney pie, and Pumpkin Creme Brulee Tarts for dessert.

"The Tourtiere is such a familiar smell during Christmas and holiday season. Like every Nyonya recipe, each family has a secret ingredient for their Tourtiere. So, now you know how my house smells like during the holiday season," Olson said as she prepared the hearty dish that is best served with a side salad.

Watching Olson cook reminded me of science class at school because she explained the science behind the baking. She said that although she was first trained as a savoury chef, it was only when she evolved as a pastry chef that her cooking improved because "it's all about science" when it comes to baking.

So you will understand why certain things don't turn out right even though you followed the recipe down to the T, for example, because of the temperature of your oven or how long you left the dough out on your worktable.

Olson sprinkling sugar on the Pumpkin Creme Brulee Tarts.

During the cooking demonstration, Olson told us about the funny mishaps that happen behind the scenes during the shooting of her TV shows.

One time she was making a lemon tart for the show and she forgot to put in the lemons while talking. Luckily, her producer noticed and stopped the shoot.

"Imagine a lemon tart dish without lemons! And that's the most important ingredient," laughed Olson. "Also, don't try to talk while cutting at the same time," she warned.

What you see on TV in a cooking show is also very different from reality. The cooking show may be an hour long but the truth is, filming can take from 12 to 15 hours for one episode of Olson's show.

Another "secret" about cooking shows is that it may take up to 16 meringue pies to shoot a show about making one meringue pie!

That's why within seconds after kneading the dough, the chef can take a baked product out of the oven already or the meat pie filling that takes longer to cook over the stove is ready immediately.

"Usually, the extra food will be given to my crew first and the rest of it will be donated to charity," said Olson.

Do you know how the time lapse video promo for her "Bake with Anna Olson" show was filmed? Olson said that the entire set was dark save for a spotlight in the middle where the pastries are baked. A camera was left there, filming the entire process so you can see the pastries rising up.

What we don't know is that the initial footage had to be scrapped because there were reflections of people walking around throughout the day on the glass of the oven door!

The Pumpkin Creme Brulee Tart is rich and absolutely yummy.

"Taping is the retirement of a recipe actually because it takes many months to prepare, taste and test the recipe before we film it," said Olson.

After the cooking demonstration, we had a chance to get to know Olson a little better during a roundtable session. Christmas dinner is a very peaceful and quiet affair for Olson and her family as there would only be six to eight people to cook for. It is a nice break from the hectic schedule that is her normal work day.

"We would have multiple desserts for Christmas  and some of my favourites are sticky toffee pudding and Mont Blanc tart with white chocolate cream on top," said Olson.

She is seasonally motivated when it comes to her favourite food, so she would crave different types of food depending on the season but if she were to choose, beef in all forms is her favourite.

She also loves collecting new and vintage Le Creuset pots and pans and KitchenAid mixers in different colours.

One of her must-haves when she visits Malaysia is coconut. It is the one thing she cannot get fresh back home.

But she is no fan of durian. "Durian is ... interesting. I didn't like it fresh. It was an assault on the senses," Olson said hesitantly. Then someone recommended that she taste durian in other forms, such as in ice-creams or in cakes with chocolate.

At the end of the roundtable session, Olson asked us for food recommendations in Malaysia and she jotted them down on a piece of paper. This is probably the first time I've seen an interviewee asking the interviewer questions. Then again, this is not any other interviewee. This is Anna Olson.

Catch Anna Olson on her brand new programme, "Bake with Anna Olson" on the Asian Food Channel (AFC) Astro Channel 703 on Tuesdays, 9pm.

"Like every Nyonya recipe, eachfamily has a secret ingredient for their Tourtiere."

World’s first caviar vending machine opens in US

Posted: 25 Nov 2012 05:00 AM PST

BURBANK, California, Nov 25 — Need a caviar fix at 2 am? Billed as a world first, a caviar vending machine has opened in California for the deep-pocketed who prefer to indulge their snack cravings with caviar and blinis rather than candy bars and chips.

Beverly Hills Caviar has set up the luxury snack food vending machine at the Burbank Town Centre Mall, which also dispenses all the accoutrements one needs for a gold-gilded, midnight snack.

Think caviar, truffles, escargot, blinis, bottarga (fish egg sacks), oils, Mother of Pearl plates and spoons, gift boxes and gourmet salts.

Beverly Hills is also home to another innovative, automated food delivery system. Earlier this year, a 24-hour ATM machine that dispenses cupcakes sent foodies on a sugar high.

For US$4 (RM12), customers can choose between flavours such as red velvet, chocolate, vanilla, chocolate marshmallow, and Irish chocolate.

It's been a big week for caviar. Celebrity chef Eric Ripert, of what's been described as the best seafood restaurant in New York, Le Bernardin, also launched his own line of luxury caviar.

No joy for Rodgers as Swans hold Liverpool

LONDON, Nov 25 — Liverpool manager Brendan Rodgers was unable to get one over his former side Swansea City on his return to Wales on Sunday as the Anfield side continued their mediocre Premier League start with a 0-0 draw at the Liberty Stadium.

Liverpool, anchored in mid-table with just three league wins from 13 games, created the better openings in a lively encounter.

Teenage winger Raheem Sterling rattled the crossbar with a rasping volley on 33 minutes and 60 seconds later the visitors had a goal disallowed when Luis Enrique, who slid in to turn home Luis Suarez's cross, was denied by the offside flag.

Swansea, who appointed Dane Michael Laudrup to succeed Rodgers after he left in June, moved up to eighth on 17 points.

Former Liverpool manager Rafael Benitez makes his first start as interim Chelsea boss when the Londoners, who axed Roberto Di Matteo on Wednesday - hours after their Champions League defeat by Juventus - host unbeaten Manchester City later on Sunday (1600 GMT).

City can regain top spot with a victory after Manchester United moved two points clear with a 3-1 win over Queens Park Rangers at Old Trafford on Saturday.

In other games, strugglers Southampton host Newcastle (1500) while Tottenham Hotspur take on West Ham United at White Hart Lane (1600). — Reuters

Sexton lifted the FA Cup as Chelsea boss in 1970 and went on to win the European Cup Winners' Cup the following season.

He made his name as a player with West Ham United and went on to manage Manchester United between 1977 and 1981 after leaving Queens Park Rangers.

Gerakan Sabah optimistik penduduk Cina akan pilih BN

Posted: 25 Nov 2012 08:24 AM PST

— Bernama

Police drama wins best picture at Chinese-language ‘Oscars’

TAIPEI, Nov 25 — A Chinese police drama featuring a cast of amateur actors yesterday became the surprise best picture winner at Taiwan's annual Golden Horse Awards, dubbed the Chinese-language "Oscars."

"Beijing Blues," directed by Gao Qunshu and about plain cloth police hunting down thieves and con artists in Beijing, also bagged best cinematography and best film editing awards.

"This is really unexpected... I am only an amateur director who shot a few films. I didn't expect that I'd have anything to do with the Golden Horse," said Gao at the ceremony in Ilan county in northeastern Taiwan.

Acclaimed Hong Kong director Johnnie To's financial drama "Life Without Principle" also fared well, collecting best director for To, best leading actor for Lau Ching-wan and best original screenplay.

Lau played a simple and honest gangster in the movie that centres on the characters' struggles between money and principles in the midst of a financial crisis in Hong Kong.

To was absent from yesterday's ceremony while Lau, a first-time Golden Horse winner, dedicated the award to his family in a brief speech.

Taiwan's Gwei Lun-mei was crowned best leading actress for her role as a wilful and frustrating woman in the love story "Gf*Bf", also released as "Girlfriend Boyfriend".

"This award is a major encouragement for me. I love making films very much and I will continue to work hard," said Gwei, her voice cracking with emotion. Gwei became the first Taiwanese to take the title in six years.

Hong Kong singer-actor Ronald Cheng won best supporting actor for his role in "Vulgaria" while Liang Jing from China took best supporting actress for playing a mid-wife in the black comedy "Design of Death".

Chinese social satire "Mystery," directed by Lou Ye, only collected best new performer for actress Qi Xi and best original film score despite leading the race with seven nominations.

"Mystery" marked Lou's first film after he was banned from film-making for five years for showing his politically-charged love story "Summer Palace" at the Cannes Film Festival without government approval in 2006.

More than 30 films from Taiwan, China, and Hong Kong were nominated in the 49th edition of the Golden Horse Awards, styled after the US Academy Awards but decided by a jury along the lines of the Cannes festival. — AFP/Relaxnews

Rolling Stones return to mark 50 years in music

Posted: 24 Nov 2012 11:07 PM PST

LONDON, Nov 25 — The Rolling Stones take to the stage later today after a five-year hiatus to celebrate the golden jubilee of one of the most successful and enduring bands in rock and roll history.

Now in their mid-60s to early 70s, lead singer Mick Jagger (picture), guitarists Keith Richards and Ronnie Wood and drummer Charlie Watts will perform five concerts — two at the O2 Arena in London on November 25 and 29 and three in the United States next month.

Joining them at the O2 today will be former band members Bill Wyman and Mick Taylor, the first time the two ex-Stones have performed with the group in more than 20 years.

And in a fresh announcement yesterday, American R&B singer-songwriter Mary J. Blige and guitar great Jeff Beck have also been added to the lineup as special guests.

The flamboyant veterans behind a string of hits including "(I Can't Get No) Satisfaction", "You Can't Always Get What You Want" and "Jumpin' Jack Flash" have promised a "stunning" gig lasting more than two hours.

A sellout crowd of some 20,000 people is expected, in spite of widespread complaints from fans at ticket prices that ranged from £95 (RM465) to up to £950 for a VIP seat.

Costs went far higher on secondary ticketing websites, although by Friday eBay was offering several seats to today's show at below face value and there were places still officially available at around £400 apiece.

The band has defended the prices, saying that the shows are expensive to put on, although Billboard, a specialist music publication, reported that the quartet would be paid US$25 million for the four shows first announced. A fifth was added later.

Burst of activity

The concerts are the culmination of a busy few months of events, rehearsals and recordings to mark 50 years since the blues-infused rockers first took to the stage at the Marquee Club on London's Oxford Street in July 1962.

There has been a photo album, two new songs, a music video, a documentary film, a blitz of media appearances and a handful of warm-up gigs in Paris.

The O2 Arena was where another top band of the 1960s and 70s, Led Zeppelin, staged an eagerly awaited one-off reunion in 2007, and while the Stones have appeared together far more regularly, it is their first arena performance in six years.

One factor behind the long break has been Wood's struggle with alcohol addition, according to Rolling Stone magazine, while Jagger and Richards also fell out over comments the guitarist made about the singer in a 2010 autobiography.

"We can't get divorced — we're doing it for the kids!" joked Richards in a recent interview after apologising to Jagger.

While the rock and roll excesses of the swinging 60s and 70s are in the past for the band, and their very best songs may be behind them, music critics praised their recent single "Doom and Gloom" from the "GRRR!" greatest hits album just released.

And there have been hints from the band that the five gigs which wind up at the Newark Prudential Center on December 15 may not be the end of their reunion.

"Once the juggernaut starts rolling, it ain't gonna stop," Richards told Rolling Stone. "So without sort of saying definitely yes — yeah. We ain't doing all this for four gigs!" — Reuters

Swiss restorer breathes new life into Transylvanian church organs

Posted: 25 Nov 2012 06:33 AM PST

HARMAN (Romania), Nov 25 — In the medieval fortified churches of Transylvania, dozens of majestic organs have fallen prey to rodents and the ravages of time.

But thanks to the dedication of Swiss restorer Barbara Dutli, these imposing instruments — "whole orchestras by themselves", as French writer Honore de Balzac used to say — are rumbling back to life.

And Baroque organ music has started to resound again in this region of central Romania.

"Transylvania is a very interesting region for historical instruments. I don't think you'll find anywhere else in Europe with as many instruments of this value and beauty that aren't in working order," Dutli told AFP.

The restoration project has even won the support of Britain's Prince Charles, a staunch promoter of Transylvania's rich heritage.

Last summer, he sent a message saying he "prayed with all his heart" for the successful restoration of the organ at Rupea village.

To breathe new life into these instruments built between the 17th and 19th centuries, Dutli becomes a detective trying to unearth the original construction plans and identify the materials used for the keys, pipes and wooden panels.

"We are trying to restore the organs to their original condition," she says.

When she started work on the Rupea model last year, she could not immediately identify the builder. But after scrutinising the instrument's thousands of pieces, her heart began to pound when she spotted a date written on the sheepskin of the bellows: 1699.

"Can you imagine? This means that this organ was built in the 17th century when Bach was just 14 years old," she said, her blue eyes twinkling.

Beside her, sitting above the bellows, celebrated organist Steffen Schlandt is rehearsing "with great emotion" on this historical instrument that seemed doomed to decay just a few years ago.

To restore the keys Schlandt is playing, Dutli had to look all over Europe to find a plank carved from the root of a walnut tree.

The craft disappeared under the Communists

The 700 pipes —ranging in height from a few centimetres to more than two metres (six feet) —were either restored or replaced according to methods used by craftsmen in the 17th century.

"I shape them on the sand," Magyar Arpad says proudly as he applied the technique of casting flat sheets of alloys on a special sand bench. The 29-year-old ethnic Hungarian from Romania learned organ-building in a workshop Dutli set up here in Harman, a village in the heart of Transylvania.

Dutli, born in the Zurich area, first began coming to Romania in the 1990s, just after the fall of the brutal dictatorship of Nicolae Ceausescu, to help restore organs during her holidays.

Under the Communist regime, religion was banned and the craft of organ-building disappeared.

Fascinated by the region, she settled in Romania and set up a training centre for restorers in 2003 with the help of the Swiss Foundation for Organs in Romania.

"We want to train a new generation of Romanians to build and restore the organs of their country," Dutli says.

Students follow a three-year training programme, combining theory and practice under the guidance of Swiss maestros. They are also taught cabinet-making to broaden their chances on the labour market.

"What is really good is that we learn a craft that will be very useful in the future. There are so many organs to be restored that I think even my grandchildren will have work," 22-year-old apprentice Lorincz Konrad Leher told AFP.

It is a unique opportunity in a country from which more than three million people have emigrated to find work.

Only about one-fifth of Transylvania's approximately 250 organs have been restored so far, according to Kurt Philippi, an ethnic Saxon musicologist who has unearthed century-old music scores for organs.

"Saving the organs is like saving a part of our culture and identity," he said, recalling the tragic fate of his community.

The Saxons settled in Transylvania in the 12th century when King Geza II of Hungary sought their help to defend the eastern border of the kingdom from Tatars and Turks.

They lived and prospered for centuries until World War II when many were enlisted, sometimes against their will, in the Wehrmacht because of their German ancestry.

After Soviet troops entered Romania in 1944, tens of thousands of Saxons were deported to labour camps in Siberia.

For decades under the Communist regime, Saxons were unable to leave Romania; they fled en masse to Germany after the fall of Ceausescu.

Romania's ethnic Germans including Saxons numbered more than 630,000 in 1930; by 2002 there were fewer than 60,000 according to the latest available census figures.

Today the fortified churches built by their forefathers and listed by UNESCO as World Heritage —as well as organs with their intricate linden-tree ornaments — remain as their legacy.

Dutli hopes to save more of these masterpieces: "What is fascinating is to transform dead materials -- wood, metal, animal skin -- into something that produces great music." — AFP-Relaxnews

Exercise before school improves concentration, says study

Posted: 25 Nov 2012 06:27 AM PST

COPENHAGEN, Nov 25 — Cycling or walking to school increases a child's ability to concentrate in the classroom, the results of a Danish study published Friday showed.

Children who were driven to school, or who took public transport, performed less well in a test measuring concentration levels, than those who had walked or cycled, a joint study by researchers at the universities in Copenhagen and Aarhus found.

"The exercise one uses to transport oneself to school is reflected in the level of concentration one has circa four hours later," said Niels Egelund, a co-author of the report.

The results surprised the researchers, as their hypothesis originally focused on the effects of eating breakfast and lunch on pupils' ability to concentrate.

"The results showed that having breakfast and lunch has an impact, but not very much compared to having exercised," Egelund told AFP.

"As a third-grade pupil, if you exercise and bike to school, your ability to concentrate increases to the equivalent of someone half a year further in their studies," he added.

In the survey, taken by 19,527 pupils aged five to 19 years, participants were asked about their exercise habits and were then given a basic test measuring their concentration.

"Most people know the feeling of being refreshed after having exercised, but it is surprising that the effect lasts for so long," Egelund said. — AFP-Relaxnews

Tindakan Anwar mohon bantuan Australia hanya ‘helah’ pembangkang, kata pemimpin Umno

Tindakan Anwar mohon bantuan Australia hanya 'helah' pembangkang, kata pemimpin Umno

Pemilihan Mohamad Sabu belum menjadikan status kepimpinan ulama terlucut.

Tetapi PAS tetap seperti ketika ia ditubuhkan dulu.

Menilai tingkah laku pemimpin politik

Posted: 24 Nov 2012 04:15 PM PST
