World Chefs: The world on a plate from David Laris

Posted: 26 Feb 2013 09:00 PM PST

February 27, 2013

David Laris at home in Laris Contemporary Dining in Hong Kong. — Reuters handout picsHONG KONG, Feb 27 — David Laris, who made a name for himself at the iconic Mezzo in London, is now bent on making his mark in Hong Kong by convincing the city's discerning diners that they can do fine cuisine without pretensions and a stiff upper lip.

The Australian-born Laris, who has opened restaurants in Beijing and Shanghai, is best known for Laris at Three on the Bund, which has picked up top ratings in local food guides such as the Miele Guide.

Reuters spoke with Laris on how his ethnic influences shaped his cooking style, and why he thinks Hong Kong is fertile ground for nurturing his culinary philosophy with his new restaurant, Laris Contemporary Dining in Hong Kong.

Q: You've spent much of your childhood in Greece and took on a classic French apprenticeship in Sydney. How did these early influences shape your life as a chef?

A: I lived in a small village in Greece from the age of six till 10 so it was an age when a boy is taking in a lot of the world around him. It definitely gave me a love of adventure. I liken it to a Greek version of Huckleberry Finn, I joke to myself; running around the country village, and spending summers by the sea with my extended Greek family ... Being part of the olive harvest, fishing with my grandfather, uncle and father in the Mediterranean with our little boat, growing watermelons, seeing the tomatoes drying on the side of the road that would be later turned into tomato paste, seeing all the ladies in the family gather for full days of cooking, the killing of the lamb for Easter in the farmhouse courtyard, stomping grapes for wine, tenderising giant octopus on the side of the road with a stick and water and whole days that seemed to be surrounded by eating, drinking and family are memories that will stay with me and become part of my life's story.

Perhaps with such strong imagery, taste and smell connecting me to these early years, it was destined that I would develop a long love affair with food and cooking. I believe everything we do and see in life somehow influences and shapes our perception of the world. Then stumbling into a French apprenticeship began to further shape and define all those influences into a solid approach to cooking.

Q: How did you come up with the concept of Laris in Hong Kong, cuisine described as "modern dining with an Australian flair and global approach"?

A: It is an evolution of a lifetime of cooking and styling plates in fashion and approach that is my own. Many of the dishes are from the original Laris or new dishes I have been working on over the last year or so. What I constantly do is evaluate and evolve them to be relevant in today's approach to cooking or at least as I see it. This is a simple way of saying let's not box in or define what can and can't be used in the Laris kitchen. I like to keep my menu vibrant and fresh. I like to surprise and delight, have moments of playfulness while still being grounded in solid cooking techniques and I also like to use the most up to date approaches that are out there while continually creating new ideas.

A Laris favourite: Foie gras with hazelnut praline, Muscat jelly and freshly baked brioche.Q: You've mentioned a "long love affair" with "elegant unpretentious dining". How does that all come together at Laris?

A: It is about the way I hope you feel when dining in Laris, I want the food to feel elegant, the service to feel elegant and set the diner at ease so we can be there to create an experience for them, it should always be about the guest and not about our ego. I hope people get that there is refinement without the need to be arrogant or pretentious.

Q: What have you learned about the Chinese palate for fine cuisine from Laris at Three on the Bund in Shanghai? And how are you seeing their taste evolve with Laris in Hong Kong?

A: I really don't look at it that way, so it is a hard question to answer. To be honest, perhaps if apart from what I have already have said I can add the following, I think mainland customers have become increasingly adventurous in their desire to try new global as well as innovative cuisine. I have never written my Laris menu for one market or another; otherwise it would not be possible to be honest in the creative process. You have to be first true to the food and the nature of the food in the concept and if you are truly honest then this will come through to the palate.

Q: You've travelled extensively, such as Macau, Hong Kong and Hanoi. How did these travels influence your way of cooking?

A: Very much so. Everywhere I have been, travelled, eaten and seen influences my own evolution as a chef, how could it not? Asia is such a vibrant, rich and diverse set of cultures and flavours, once you have opened the door to the flavours in this part of the world it is impossible to go back, and who would want to? ... We are the sum of our parts after all and a big part of me is my time in Asia with the food, the culture and the people playing into everything I do, as with my earlier influences, these are important and continue to shape me. I still discover new dishes and ingredients all the time and think of how I can interpret or use them in my own style.

A Laris favourite: Foie gras with hazelnut praline, Muscat jelly and freshly baked brioche.Ocean Trout Tataki

400 g ocean trout filet, skin off
10 g (2 t) sake
30 g (2 t) Japanese vinegar
5 g (1 t) sea salt
2 eggs
40 g (2.7 t) XO sauce
40 g (1.4 oz) Keta (Russian) caviar

1. Boil the eggs for eight minutes to get a soft-boiled yolk.
2. Peel and separate the yolks from the whites. Discard the whites and mix the yolks together and reserve.
3. Marinate the trout in sake, Japanese vinegar and sea salt for 20 minutes.
4. Cut the trout into four portions and lightly season with sea salt.
5. With a blow torch, sear the outside of the fish until you have a nice crust and the centre is raw but still warm. (If you don't have access to a blow torch, the fish can be seared very quickly on all sides in a very hot pan with some cooking oil.)
6. Cut each portion into 4 pieces and place on the plate. Garnish with XO sauce and the caviar. Pipe the egg around the fish. — Reuters

Website names most powerful people in food

The most powerful people in America's food industry? They're at Google. — AFP picNEW YORK, Feb 27 — Popular food site The Daily Meal has come out with its version of the most influential people in America's food industry, a list based on one simple criterion: Is this person capable of changing the way Americans eat?

The ranking is peppered with names that are both familiar and star-powered — chefs Thomas Keller, Grant Achatz, Mario Batali — as well as the lesser known names behind food behemoths such as The Monsanto Company, the world's largest producer of genetically modified seeds, as well as CEOs and editors-in-chief.

According to the editors, the most influential people in the American food landscape aren't household names: they're Jack Menzel, product managing director and Bernardo Hernandez, director of product management and management director for Zagat at Google (Google acquired the crowd-sourced dining guide in 2011).

The Daily Meal's reasoning? "We're singling out Menzel and Hernández for their considerable contributions in these areas, but also as representatives of a hydra-headed entity that increasingly informs us about food (along with everything else) and offers us pretty much instant access to an endless pool of recipes, cooking tips, restaurant recommendations, chef profiles, foodstuff definitions, and a menu full of other delicious stuff."

Other notable names that made their list include Mike Duke, president and CEO of Walmart, The New York Times restaurant critic Pete Wells, First Lady Michelle Obama and Ben Silbermann, founder and CEO, Pinterest.

The top five influential people:

1. Jack Menzel, product managing director, and Bernardo Hernandez, director of product management and managing director for Zagat, and their teams, Google
2. Hugh Grant, chairman, president, and CEO, The Monsanto Company
3. Michael R. Taylor, Deputy Commissioner for Food, Federal Drug Administration
4. Patricia Woertz, chairman, president, and CEO, Archer Daniels Midland (one of the largest agricultural processors in the world)
5. Mike Duke, president and CEO, Walmart

LONDON, Feb 27 – Everton beat third-tier FA Cup giantkillers Oldham Athletic 3-1 in an FA Cup fifth round replay yesterday to tee up an all Premier League quarter-final against Wigan Athletic.

Belgian Kevin Mirallas and Leighton Baines put the home side 2-0 up in the first half before Leon Osman added a third after the hour mark to show the gulf in class against Liverpool's surprise fourth-round conquerors.

Matt Smith, who equalised in the last minute for Oldham in the 2-2 draw at home to Everton on Feb. 16, struck with a header from a corner moments later to give the visitors hope but the hosts were never really troubled again in the final half hour.

Everton will next host Wigan on March 9. – Reuters

Maths does not add up in Hart’s Man City title dream

"Even if there is one game to go and we are 12 points behind, we'll still believe. We've got to," local media quoted the England international as saying today.

"We've got to keep fighting, you never know."

Except that he does know that should there really be a 12-point gap on the last day of the season, the trophy will already have red ribbons on it and be on its way to an open-top bus parade with a Manchester United team celebrating a 20th title.

Luckily for Hart, champions City in fact have 11 games in which to overturn a 12-point deficit, which is at least a mathematically possible if not an easy task.

"We have just got to keep going," Hart added. "It's going to be really hard, we've got a lot to do but we're going to have a damn good go at doing it."

They could in fact be 15 points behind United by the time they next play as Alex Ferguson's side host Norwich City on Saturday before City's trip to Aston Villa yesterday. — Reuters

Bulging bank balance adds to pressure on Arsenal

Posted: 26 Feb 2013 07:55 AM PST

February 26, 2013

LONDON, Feb 26 — With 120 million pounds (RM564 million) sloshing around in the club's bank accounts, the pressure on prudent Arsenal to start splashing the cash will intensify again when what looks like another trophyless season ends in May.

Arsenal manager Arsene Wenger. — Reuters picIf silverware was handed out by accountants and economists the north London club would have cleaned up in recent seasons, such has been their reluctance to spend big money to sign the world's top names.

On the surface it has been a policy endorsed by long-serving manager Arsene Wenger, a man with a degree in economics and with a passion for adding value to lesser-known players rather than paying for ready-made models off the shelf.

He has often criticised the spending habits of other sides in the Premier League and with UEFA's financial fair play rules coming into force, Arsenal will be well-placed when the likes of Chelsea and Manchester City rein in their budgets.

Yet, as has been proven by a non-existent Premier League title challenge, two humiliating exits to lower division opponents in the domestic cups and a first-leg humbling by Bayern Munich in the last 16 of the Champions League, there is a fair amount of catching up to do.

Arsenal are even being left in the shade by north London rivals Tottenham Hotspur, who have managed to muscle their way into the Premier League top four without risking the club's financial future.

The cash conveyor belt provided by the Champions League is therefore by no means a certainty next season for fifth-placed Arsenal.

The Gunners have reached the knockout stage of the Champions League for 13 consecutive seasons under Wenger's astute management, a fine achievement considering that run spanned a move to the 60,000-seater Emirates Stadium which, thanks to clever financial management, is now paid for.

Bragging rights among England's football fans tend to be about league titles and FA Cups rather than balance sheets and the last time Arsenal's fans had anything to crow about was in 2005 when they beat Manchester United to win the FA Cup.

CASH RESERVES

So, the news that Arsenal made a pre-tax profit of 17.8 million pounds in the six months to November, have no short-term debt and have cash reserves of 123.4 million pounds will have been met by shrugs and raised eyebrows by fans, especially when reading the comments of chairman Peter Hill-Wood.

"Our ability to compete at the top of the game here and in Europe is underpinned by our financial performance which gives the club strength and independence," he said in yesterday's statement.

"Our desire is to make everyone connected with Arsenal proud of the club. We know that comes through winning trophies but also through the way we do things and that will remain our constant guide.

While Arsenal spent 40.9 million pounds in the July and August transfer window on Lukas Podolski, Santi Cazorla and Olivier Giroud as well as extending player contracts and signing left back Nacho Monreal in January, there has been an outward drift in quality.

Robin van Persie's sale to Manchester United in August was the final straw for many fans who have watched the likes of Cesc Fabregas, Emmanuel Adebayor, Kolo Toure, Samir Nasri and Gael Clichy leave to win silverware elsewhere in the past five seasons.

The incomings have hardly been resounding success stories.

Andrei Arshavin, signed for 15 million pounds in 2009, has faded badly, while others such as Ivory Coast forward Gervinho, German defender Per Mertesacker and Brazilian Andre Santos have not cut the mustard.

Wenger's own position has come under scrutiny and the Frenchman endured some of his most difficult days since joining in 1996 last week when an FA Cup loss to Blackburn Rovers induced a bad-tempered rant at journalists, preceding a 3-1 home defeat by Bayern in which they were outclassed.

With Premier League clubs about to receive another huge financial windfall courtesy of a new television deal, plus the benefits of a lucrative sponsorship from Emirates, fans of the club are already drawing up shopping lists of players.

Wenger, who has one season left on his contract, will have a large war chest in June and the likes of Barcelona striker David Villa, Lyon playmaker Yoann Gourcuff and Fiorentina frontman Stevan Jovetic will surely be on his radar too. — Reuters

According to the Italian the collaboration was a happy accident — "it happened naturally in my atelier where our ideas and skills fused together, listening to music, chatting and having a good time," he told WWD.

The Polish supermodel certainly likes to flex her creative muscles. Last year, working with her husband Sasha Knezevic, she relaunched avant-garde print publication 25 Magazine, ringing in fashion favours from models like Karlie Kloss and Abbey Lee Kershaw for the kinky sex-themed issue.

Youngest Oscar nominee Wallis to play Annie

Best Actress nominee Quvenzhané Wallis arrives on the red carpet for the 85th Annual Academy Awards on February 24, 2013 in Hollywood, California. — AFP picLOS ANGELES, Feb 26 — Quvenzhane Wallis, fresh from the Oscars spotlight as the youngest ever best actress nominee, is to play "Annie" in a Tinseltown remake of the hit Broadway musical, filmmakers said.

The nine-year-old, who drew praise for her amazingly mature performance in "Beasts of the Southern Wild," will play the title role in "Annie," also a remake of the Oscar-nominated 1982 movie.

"With the recent Academy Award nomination and critical acclaim, (Wallis) is a true star and we believe her portrayal as Annie will make her a true worldwide star," said Hannah Minghella, Columbia Pictures production head.

"She is an extraordinary young talent with an amazing range, not only as an actress but as a singer and dancer, and we can't wait for audiences to further discover her."

The new "Annie" — produced by Overbrook Entertainment, Marcy Media and Sony Pictures — will be released around December 2014, directed by Will Gluck and with producers including James Lassiter, Will Smith and Shawn "Jay-Z" Carter.

Gluck is currently revising the film's screenplay, written by British actress Emma Thompson and rewritten by Aline Brosh McKenna based on the stage musical.

Wallis — whose favorite pastimes include singing and dancing, basketball, volleyball and cheerleading, according to the filmmakers — has already worked on an upcoming film, "Twelve Years a Slave" with Brad Pitt.

She also has made "Boneshaker," a short about an African family lost in America.

"Silver Linings Playbook" star Jennifer Lawrence won the best actress Oscar on Sunday, beating shortlisted rivals including Wallis and, coincidentally, the oldest ever nominee in the category, 86-year-old French star Emmanuelle Riva. — AFP-Relaxnews

Sabah mempunyai 926,638 pengundi menurut laporan akhbar berbahasa Inggeris The Star pada Jun.

United and Barca beware: Kaka is back

Posted: 25 Feb 2013 04:26 PM PST

February 26, 2013

Andy West is a sports writer originally from the UK and now living in Barcelona. He has worked in professional football since 1998 and specialises in the Spanish Primera Division and the English Premier League. Follow him on Twitter at @andywest01.

FEB 26 — Who can remember Kaka?

You know the one: tall, lithe and elegant Brazilian; talks a lot about Jesus; used to play football for a living.

Used to play...? Hang on, after last weekend it appears that he still does. Furthermore, he still does it rather well indeed, and is now poised to take an unexpected part in some pretty significant games in the next seven days.

Not so long ago, Kaka filled the gap between the retirement of Zinedine Zidane and the emergence of Lionel Messi in being widely regarded as the greatest player on the planet.

His crowning moment came in the 2007 Champions League final when he produced a wonderful display to inspire AC Milan to victory over Liverpool, having previously scored three goals in the two-legged semi-final win against Manchester United.

The effortless grace he displayed throughout his time with the glamorous Italian club — which saw him win the FIFA Ballon d'Or award in 2007 — was enough to entice Real Madrid to splash out €65 million (RM266 million) for his signature in the summer of 2009, making him the co-star in their new wave of Galacticos alongside fellow new recruit Cristiano Ronaldo.

That, at least, was the theory. But the reality was very different as Kaka failed to reproduce the magisterial form he had routinely displayed in the red-and-black shirt of Milan once he started to pull on the all-white of Madrid.

While Ronaldo dazzled, Kaka desperately disappointed. Hampered by a series of injuries — including a serious knee problem that kept him out of action for eight months — Kaka gradually became a marginal figure at the Bernabeu, a process that was hastened by the arrival of Jose Mourinho as manager in 2010.

Kaka is very much not Mourinho's kind of player. Whereas the Portuguese boss prefers rugged, robust and physically strong performers, even among his creative talents (Ronaldo being a prime exhibit), the Brazilian playmaker is a graceful, balletic presence. He does not run across the pitch; he glides. He does not race past challenges; he dances away from them. He does not smash the ball into the net; he caresses it.

His style of play would be more accustomed to Barcelona's short-passing game than the swift counter-attacking approach favoured by Mourinho at Madrid, and his opportunities in the team therefore quickly became limited.

Throughout last summer, persistent rumours suggested that Kaka's stint at the Bernabeu was on the verge of coming to an end. A return to AC Milan was widely mooted, with the potential of a move to his native Brazil another possibility.

Mourinho certainly didn't seem particularly keen to keep a player who was costing a fortune in wages without contributing a great deal on the field of play, and the manager made his feelings even clearer when he forked out a reported €38 million to sign Luka Modric, another midfield playmaker.

Although the summer transfer window came and went without Kaka leaving Madrid — his high wages proving prohibitive to potential suitors — he played virtually no part in the opening weeks of the season, often failing to even make it onto the bench.

And you could hardly blame Mourinho, because on the few occasions that Kaka did feature he played poorly, cutting a lost and disconsolate figure and barely exerting any influence on the action as he struggled to assert himself upon an unfamiliar playing system. It was sad to witness the demise of a once magnificent player, whose career appeared to have entered a terminal decline.

He didn't start a league game until a meeting with lowly Celta Vigo at the end of October, and even then Mourinho hauled him off at half-time and he didn't reappear in the starting line-up until February — by which time Madrid had again tried, and again failed, to sell him during the January transfer window.

Quite clearly, then, Kaka has spent the season far from the forefront of Mourinho's thoughts. But in the last few weeks a series of circumstances — Modric's poor form; Angel di Maria's inconsistency; the need to rest Mesut Ozil and Xabi Alonso — have given the veteran Brazilian another chance to impress, and this time he's taken it with both hands.

Kaka started for Madrid in Saturday's 2-1 victory at bottom-of-the-table Deportivo La Coruna, and produced a man-of-the-match performance. Not only did he register his first league goal since last March for the equaliser — a vintage 20-yard curler — and then release Ronaldo with a sublime pass to set up Gonzalo Higuain's winner, perhaps more importantly he also played a decisive role throughout Madrid's strong second-half showing.

He was at the heart of virtually every attacking move, directing the play and controlling the shape and structure of his team. Just like the good old days at Milan, everything was going through Kaka and everything he did was constructive, unlike his previous appearances under Mourinho, which bore the look of a man trying to fit in without ever feeling at home.

It couldn't have come at a better time, because Madrid are now entering a season-defining run of games. Tonight: Barcelona at the Nou Camp in the second leg of the Copa del Rey semi-final (1-1 after the first leg). Saturday: Barcelona at the Bernabeu in La Liga. Next Tuesday: Manchester United at Old Trafford in the second leg of the Champions League last-16 tie (1-1 in the first leg).

Although Mesut Ozil and di Maria are likely to be the preferred starters for Mourinho at the Nou Camp tonight, Kaka is now firmly within his thoughts as a strong option from the bench. There's a lot to play for, the Brazilian is back in the thick of things and it's surely impossible for neutral observers not to wish him well.

From outcast to key man in the space of a month; maybe the final chapter of Kaka's marvellous career is yet to be written.

Need China take over US role?

FEB 26 — China's rise is changing the global landscape in ways that are unpredictable. Scholars are often divided about China's intentions and its goals when it comes to looking at China's foreign policy. The rise of China is always looked at in relation to the current global power that is, the United States.

In short, "silence" is what seems to categorise China's approach towards dealing with other nations. They have consistently refrained from advising other nations on how to manage or control their country. For example, despite placing a substantial amount of investment in Africa, China withholds from instructing African nations on how to structure their respective governments in a certain way. This is, by contrast, unlike what the US does when they invest in other countries.

There have been many calls for China to overhaul its foreign policy to prepare itself to be a global leader. After all China cannot deny its rise in light of the declining US, and therefore needs to take a more proactive stance. That is to say, China needs to prepare itself to take over the US position as the world leader.

Given that China has been one of the few powers that never sought any expansionist measures in its foreign policy when it was at the height of its civilisation, this push towards being the new dominant power seems to be awkward for a culture that has never aspired to obtain such power.

The question that remains is this: is the only progression of global power a situation where China takes over the US completely? Could it not be possible that the US maintain lead in some areas and China in others?

There is a theory that states that stability of international order would only be achieved when there is a single dominant power in the global order.

However, the very concept of power is a nuanced one, an idea put forward by political scientist Joseph Nye in his book "The Future of Power". Currently, the idea of power cannot be encapsulated by dominance in a single field. This is entirely new to us because before this, dominant states often held all power in all fields — this is because dominant states were also states with a strong military backing, and to get a strong military power states needed strong economic standing to fund military initiatives.

Instead, we find that in today's world, the way the world is structured is far different than before. In terms of economics, there are a number of dominant states such as the US, Japan and China. In terms of pure political ideology and military strength, the US remains on top.

China seems to be primarily motivated by economic dominance, a mindset that should not come as a surprise since the idea of prosperity is so deeply embedded within Chinese culture. It is with this cultural mindset that is likely to permeate through Chinese politics indirectly.

Having understood that, perhaps there is no real need for China to usurp the US. There is no real pressure, besides that of rhetoric that is pushing China to becoming the next dominant political power. This is especially since the basis of our present global order has been shaped primarily by Western thought.

China's reticence on issues pertaining to structuring governments indicates that there is some degree of reluctance on China's part to take over the US as a military power or an ideological power.

This is not to say that China will never attempt to militarise to become a dominant political power. It could very well be the case in the future. However, given the current trajectory that China has taken — that is its constant assertions of peaceful development, its explicit statements for economic development, its foreign investments driven by economic motives — it is unthinkable that China wants to become an ideological power, the way the US is.

Perhaps our world has advanced, and it is time to rethink a new global order where multiple powers can co-exist peacefully.
