Chef traces origins of Canadian pea soup

A curious Ottawa chef believes he has stumbled on the origins of Canadian cuisine while researching dishes to commemorate French explorer Samuel de Champlain's travels 400 years ago.

As with most nations in the Americas, Canadian cooking today has been influenced by centuries of immigration, but chef Marc Miron (pic) thinks there is also a common, underlying food tradition.

Modern Canadian cuisine varies from region to region, influenced by British and French colonists and subsequent waves from Europe, Asia and the Caribbean.

But Miron says he traced its roots to the cargo carried by Champlain, the famed navigator and founder of the New France settlement.

The ingredients brought from Europe four centuries ago are still to be found, he told AFP, in Habitant Pea Soup, a hardy meal which now features dried yellow peas with salt pork and herbs.

"When they came to Canada, they didn't know what to expect so they loaded up their boats with dry beans, cured meats and salted fish; ingredients that would travel well and were nourishing," he said.

"That would lead to the beginnings of Canadian cooking, with a strong French influence," he said.

Miron, who worked 20 years as executive chef for the Four Seasons hotel chain before returning to Ottawa in 2007 to open a gourmet food shore, said Champlain had also befriended local aboriginals.

"The people he met here would have influenced what he ate," he said.

While in Canada Champlain would have replaced the fish that his mariner family was used to with wild game such as hare and caribou. "He would have gone hunting with the native peoples," said Miron.

The aboriginals he encountered also ate a lot of wild berries, and shared this knowledge with him. This is the origin of a Canadian-style fruit frangipane, Miron argued.

This month, Miron's Cuisine & Passion gourmet shop is offering a taste of what Champlain ate to coincide with the city of Ottawa's Champlain celebrations.

"I thought, 'We should do something very special like recreating what they ate during that time,'" he said.

Miron tapped into government funding in order to offer cooking classes at reduced prices, but researching 17th century gastronomy proved to be an arduous task.

"We know that French cuisine really started in the 1800s with people like Careme, Escoffier and others that started documenting recipes and structuring the way we eat now into courses," he explained.

"Previously it was hard to find written recipes."

Miron said he pored over historical documents and old books to find the odd mention of foods people ate during this era, and then tried to correlate them with recipes passed on from generation to generation.

A Canadian fan of the British television series "Downton Abbey" undertook a similar investigation for a cookbook based on the early 20th century cuisine featured in the show, including recipes for apple charlotte and roast chicken.

Ottawa's Fairmont Chateau Laurier also served a meal from the menu of the Titanic during last year's commemoration of the tragic sinking in 1912.

Food is a great link to the past, as well as a delightful guide to foreign cultures when travelling, said Miron.

Philippe Ketelslegers, Filip Mesdom, Eric Derenne and Serge Condens took top honours at the competition held in the southwestern French town of Leognan, near France's winegrowing capital of Bordeaux.

A total of 16 teams from around the world including South Africa, China, Russia, Argentina and Quebec took part.

The competition aimed to "bring together... all these amateurs, tasters from the world over, who can sometimes feel isolated in their home countries," Philippe de Cantenac, a journalist for the French wine monthly that organised the event, told AFP.

The teams, blind-tasting 12 fine wines from around the world, had to identify their countries of origin, the grape varieties used in them, their appellations and their vintages.

A second edition of the competition will be held next year in another French city, Cantenac said.

The magazine La Revue du Vin de France has already hosted European championships in the same since 2008. - AFP, October 13, 2013.

The Barcelona forward curled his shot past Korean goalie Jung Sung-Ryong just before half-time, with Chelsea's Oscar getting the visitors' second shortly after the break.

Neymar, 21, had been in doubt for the game after a heavy fall in training, and he was targed with some tough challenges and constant attention in front of a near-capacity crowd.

But the young idol had the last laugh at Seoul World Cup Stadium when he thumped his strike over the wall and to the right of Jung, who got a hand to the ball but could not keep it out.

Neymar was targeted from start to finish as Hong Myung-Bo's team, already qualified for next year's World Cup, opted for tactics of harassment and frustration.

The Brazilian threw up his hands in exasperation and had a few testy moments with other players, even getting into a shoving match near the teams' benches late in the first half.

After a tepid start to the game, Neymar had taken the ball in midfield and danced through defenders before threading a pass to Oscar, whose shot travelled over the bar.

But after being brought down for the umpteenth time, Neymar took matters into his own hands as he opened the scoring with his free kick.

Brazil doubled their just three minutes into the second half. Paulinho put Oscar through and the midfielder went past the helpless Jung before putting it into the gaping net.

South Korea brought on Son Heung-Min in the 65th minute, hoping the Bayer Leverkusen winger could add some spark to the lethargic attack.

And the home side were more lively in the last half-hour, with Lee Chung-Yong heading a corner wide in the 68th minute.

It was as close as South Korea came to score in the match, as the five-time World Cup champions outclassed the hosts.

South Korea will next host Mali on Tuesday, while Brazil will take on Zambia on the same day in Beijing. - AFP, October 12, 2013.

The giant Del Potro, fresh from winning the Japan Open, went into the semi-final at the Qizhong Tennis Center trailing 8-3 in head-to-heads, but rocked Nadal with a double break in the first set and kept up the pressure to win 6-2, 6-4.

Earlier, top seed Djokovic swept aside Jo-Wilfried Tsonga 6-2, 7-5 to earn the chance to defend his title.

Nadal has enjoyed one of the best seasons of his career, winning 10 titles including the French Open and the US Open, and came into the match with all eyes on yet another showdown with Djokovic.

But the 13-time Grand Slam champion was given the run-around by the sixth seed, who launched a sustained and blistering all-court attack from the start, achieving the rare feat of out-hitting his illustrious opponent.

Dominating from the baseline on both forehand and backhand sides, Del Potro raced into a 4-0 lead in the first set as Nadal desperately searched for a foothold.

A single break was enough in the second set for the inspired Argentine, who hit a total of 28 winners and 31 unforced errors, landing 80 percent of first serves.

Nadal, by contrast, failed with all six of his break point opportunities.

In the first semi-final, Tsonga landed just 46 percent of first serves in an ultimately one-sided first set, and despite an improved showing in the second he cracked in the 12th game as Djokovic completed a straight-sets win.

"I think I raised my game today compared to last night's match," said Djokovic, who lost his cool midway through the second set over a couple of line calls before he found his focus again.

"Of course, I would wish to get even a better performance tomorrow for the most important match this week. But we'll see."

The Serbian, 26, broke to love in the second game, helped by two double faults, and had a break point to establish a 4-0 lead as Tsonga struggled to gain a foothold.

The seventh seed dug deep, securing a break of his own to peg Djokovic back to 3-2, but his form then dipped again and he lost the next three games.

A more balanced second set involving a break apiece looked to be heading towards a tie-break, but the Serb secured the decisive break, claiming victory on his second match point.

Nadal and Djokovic are among three players who have already secured their places at next month's elite World Tour Finals, featuring the season's top eight players.

Marathon running without proper training can stress the heart, say researchers

Taking on a 42-kilometre race is no small feat, and researchers say that if you're less than fit or do not train properly, you could be stressing your heart.

Published in the Canadian Journal of Cardiology, a new small study finds that recreational marathon running can damage the cardiac muscle, and the effect is particularly widespread among less-fit runners, or those who do not train properly. The good news: the heart bounces back, but it could take a little while.

A research team from Université Laval evaluated 20 amateur marathon runners who participated in the Quebec City Marathon. Six to eight weeks before the race, and on the day of the race itself, the scientists observed and tested the participants, as well as testing them again within 48 hours after completing the race. Tests included MRI scans and blood sampling.

Findings showed that in half of the runners, the marathon induced a decrease in left and right ventricular function, with some also showing swelling and reduced blood flow. But for the runners who underwent a third MRI after three months of rest, results showed that the effects had reversed.

"We also found that heart muscle changes were more common and widespread in runners with lower fitness and less training," said senior author Dr Eric Larose, of the Institut Universitaire de Cardiologie et de Pneumologie de Québec. "Finally, we observed that these changes were transient."

"Although no permanent injury was observed in this group of runners, the findings suggest that there may be a minimum fitness level needed beyond which the heart can bounce back from the strain of training and running a long race."

Furthermore, these results emphasise the need for proper preparation before recreational distance runners engage in a marathon race, Larose added.

A separate study published last year in the Journal of Cardiovascular Magnetic Resonance found that adults aged 50 and older can safely run a marathon without risking serious damage to the heart, as long as they train properly and stay hydrated throughout the race. – AFP Relaxnews, October 12, 2013.

Popping vitamin D pills may not boost bone strength – study

Researchers from the University of Auckland in New Zealand reviewed 23 studies involving 4,082 healthy adults with an average age of 59. Findings showed that those who took vitamin D supplements for about two years did not have greater bone density or lower risk of osteoporosis than those who did not take them.

The studies took place in several countries around the globe, including the UK, US, Norway, Finland, and Australia. Findings were published yesterday in the journal The Lancet.

"Our data suggest that the targeting of low-dose vitamin D supplements only to individuals who are likely to be deficient could free up substantial resources that could be better used elsewhere in healthcare," Dr Ian Reid, lead study author, said in a statement.

Research earlier this year by the US Preventive Services Task Force found that adding 400 IU of vitamin D and 1,000 mg of calcium to a healthy diet does not lower risk of fractures in post-menopausal women.

Unless you are advised by your doctor to supplement with vitamin D, experts say that most of us get plenty from sunlight on our skin or from a healthy diet, including oily fish like salmon and sardines and fortified dairy products and breakfast cereals. – AFP, October 12, 2013.

Two takes on love clinch Busan film prize

Jurors in the New Currents award at the 18th Busan International Film Festival (BIFF) lauded Korean director Ahn Song-Kyoung's Pascha for its "intimate, highly original expression of an unusual love story".

At the same time they hailed Remote Control, from Mongolia's Byamba Sakhya, as a "sharply observed portrait of the tensions between city and country, reality and fiction".

Both filmmakers receive US$30,000 (RM95,400) for the award, which offers two prizes and is open to first and second-time Asian directors.

The prizes will be formally presented at BIFF's closing ceremony Saturday night.

Ahn's film tells the heart-breaking tale of a 40-year-old woman trying to hold on to her 17-year-old boyfriend and the second-time director said she had wanted to focus on the turning points in people's lives.

"I am interested in the moments in life when we become disillusioned and are forced to make decisions," she explained.

Meanwhile Sakhya's look at a romantic obsession one neighbor develops for the other was designed to highlight a Mongolian society that is in "transition", the director said.

"The whole system is changing," said Sakhya. "It's challenging for everyone but it is still full of hope."

The New Currents jurors also awarded a Special Mention to the Philippine's Hannah Espia's for Transit, a moving account of migrant life in Israel, which they said focused on an "unknown dimension" of life.

The film had been put forward as the Philippine selection for Oscar consideration.

The Busan festival sold just over 217,000 admission tickets for the 299 films screened over its 10-day run and has played host to a number of international and Asian stars, among them Oscar-winner Quentin Tarantino and the Oscar-nominated Japanese actor Ken Watanabe.

Among the highlights for international guests has been the chance to catch Korean director Bong Joon-ho's English-language sci-fi thriller Snowpiercer, a box office smash here and a film which is being prepared for international distribution.

Oscar-winning Irish director Neil Jordan (The Crying Game) delighted local audiences by saying that film world was looking to Korea for inspiration - after a record-breaking year at the local box office - and a wealth of talent in local cinema was certainly to the fore.

He cited Lee Yu-Bin's whimsical coming-of-age road trip Shuttlecock and the more commercially driven revenge thriller Dynamite Man, from director Jeong Hyuk-Won, as two examples.

Another production which created a buzz was Jung Yoon-Suk's gripping Non-fiction Diary, named BIFF's best Korean documentary.

The film casts its gaze on a series of brutal murders in the 1990s, as well as two political scandals, as it shines an often bleak light on contemporary Korean history.

Emma Watson to star in While We’re Young

The comedy-drama will be the next stop in the 23-year-old's post-Harry Potter career.

Emma Watson will join American writer and director Stephen Chbosky on the set of While We're Young, an adaptation of 29, a novel by Adena Halper. The two worked together in the past for The Perks of Being a Wallflower, a coming-of-age drama which premiered to critical acclaim last winter.

Focusing on the theme of mother-daughter relationships, While We're Young tells the story of how a 75-year-old grandmother becomes 29 again for one day. She goes on an adventure with her granddaughter, also approaching 30, while attempting to pacify her relationship with her daughter, aged 55.

The feature will be based on a screenplay by Michael H. Weber and Scott Neustadter, the duo behind (500) Days of Summer (2009) and The Spectacular Now (2013). The film will be produced by Fox, which has yet to announce shooting or release dates, Deadline.com reports. - AFP Relaxnews, October 12, 2013.

Failure led Jim Crace to Man Booker nomination for “last” novel

The idea for British author Jim Crace's Man Booker prize-nominated novel Harvest came to him almost out of nowhere at a desperate moment in his career.

The last English writer to make it onto the 50,000-pound prize's 2013 shortlist before American writers are allowed to compete for the Booker, said Harvest dropped into his head during an anxious 24 hours after his agent told him the novel he had been writing was never going to work.

"I owed money, so out of nowhere I had to find a new book," the 67-year-old Crace told Reuters.

On a train down to a London art exhibit from his home in the English midlands, Crace was moved by the ancient plough lines etched into the passing fields, which form the backbone of his tale about an unforeseen change which threatens a way of life.

"I walked into the first gallery and I turned right and... I promise you I'm not making it up, the very first picture I saw was a watercolour of a Tudor enclosure," he said.

On the train home he read a newspaper article about how soya barons were seizing land in South America. Suddenly, he had the setting, an artist character and the subject matter: how forced land enclosure affected peasants in Tudor England.

"Normally I expect to struggle with a book... but on this occasion I didn't struggle at all," Crace said. "I finished that book on the day I was due to deliver the book that had failed."

Narrative character Walter Thirsk chronicles a medieval estate whose peasants have ploughed the same fields for generations. Then strangers arrive, including an artist to sketch the land, sowing the seeds of foreboding.

Some say the plot could be a metaphor for changes announced by the Man Booker's organisers last month.

From 2014, authors from any country can compete for the award, forever skewing the landscape of a prize that was previously only open to citizens of the United Kingdom, the Commonwealth or Ireland since its launch in 1969.

Like the characters in Crace's novel, authors across the Commonwealth family who have been complacently ploughing the Booker furrow for generations have since banded together, fallen out, expressed outrage and impotence at the inevitable changes.

Crace believes the decision to allow US novelists to be entered for the Booker will make it harder for writers across the Commonwealth to get recognition and damage the prize.

Booker organisers have likened the current rules to holding the Olympics without inviting China and said winners from 2014 wil be able to claim they are the world's best English-language fiction writers.

"Let's hope that happens," Crace said.

But he suspects the changes will weaken the Booker's role in the Commonwealth and it will struggle to compete for prestige against the US Pulitzer and National Book Awards.

"My guess is it will be a self-inflicted wound," he said.

The former Sunday Times journalist rowed back on widely-reported comments that "Harvest" was his last novel and said he was working on a play.

Crace, a Shakespeare fan, lover of the natural world and keen country walker, said the play would be a contemporary re-telling of the Minotaur legend.

The winner of two Whitbreads, a US National Book Critics' Circle award and a string of other literary prizes will find out on October 15 whether he can cap his career with a Man Booker.

But in the meantime he has finally reached a point where he can step off the publishing "hamster wheel", walk the fields which inspired his "last" novel and choose whether to write any of the stories that spring to life there.

"I'm not a new agey person, but narrative is ancient and wise and generous," he said. "It's been around for so long and if you open yourself up to storytelling then very often you can end up with something just happening very, very easily." - Reuters, October 12, 2013.

Evolusi Umno terhenti

Hari ini perwakilan Umno di seluruh negara akan memilih pemimpin bagi sayap Pemuda, Wanita dan Puteri.

Siapa yang dipilih akan memberikan isyarat tentang hala tuju parti Melayu terbesar itu bagi penggal ini sehingga menuju pilihan raya umum ke-14 akan datang.

Pilihan Raya Umum 2008 dan Pilihan Raya Umum 2013 seharusnya memberikan pengajaran kepada Umno apabila menyaksikan gabungan Barisan Nasional (BN) yang mereka pimpin itu sudah tidak lagi mampu untuk mendapatkan kuasa majoriti dua pertiga di Dewan Rakyat.

Umno hidup sehingga hari ini dan masih lagi berkuasa sejak Malaysia merdeka kerana parti itu berevolusi mengikut perkembangan zaman.

Sejarah menyaksikan bagaimana apabila sosialisme dan komunisme popular di tanah air sekitar 60-an dahulu, Tun Abdul Razak Hussein yang mengambil alih kuasa daripada Tunku Abdul Rahman melaksanakan dasar-dasar sosialisme seperti Bank Rakyat, Felda dan banyak lagi.

Selepas berlakunya tragedi berdarah 13 Mei 1969 yang menyaksikan pertumpahan darah antara kaum Melayu dan Cina, Abdul Razak dengan beraninya memulakan hubungan diplomatik dengan negara komunis China.

Tindakan Abdul Razak itu berjaya melunakkan kemarahan kaum Cina selepas 13 Mei dan menyebabkan Umno dan BN relevan pada ketika itu dan menang Pilihan Raya Umum 1974 dengan majoriti besar.

Sokongan yang diterima Abdul Razak bukan hanya daripada kaum Melayu, tetapi Cina dan India serta etnik lain.

Satu lagi contoh yang dapat dilihat adalah peristiwa politik di sekitar Pilihan Raya Umum 1999. Pemecatan Datuk Seri Anwar Ibrahim menyebabkan Umno terpaksa membayar harga kehilangan sokongan majoriti Melayu sehingga menyebabkan negeri Terengganu ke tangan PAS.

Keputusan pilihan raya itu merupakan pendorong kepada perletakkan jawatan bekas perdana menteri paling lama berkhidmat Tun Dr Mahathir Mohamad.

Tun Abdullah Badawi yang mengambil alih kepimpinan memulakan dasar Islam Hadhari di kala Islam popular dan Arabisasi semakin diterima orang Melayu.

Pilihan Raya Umum 2004 menyaksikan BN menang dengan majoriti paling besar dalam sejarah. Akan tetapi Abdullah gagal untuk melaksanakan reformasi yang beliau janjikan sehingga menyebabkan beliau dihukum dalam Pilihan Raya Umum 2008.

Datuk Seri Najib Razak melancarkan gagasan 1Malaysia dalam kempen sebelum Pilihan RayaUmum  2013.

Majoriti dalam Umno tidak mengikut rentaknya. Di sebalik ucapan Najib untuk membawa Umno mengikut peredaran zaman, beliau ditekan oleh golongan dalaman terutamanya fraksi Dr Mahathir yang tidak mahu membiarkan evolusi berlaku mengikut kehendak zaman.

Najib dihukum lebih teruk dalam Pilihan Raya Umum 2013 walaupun Umno meningkatkan jumlah kerusinya.

Peningkatan kerusi Umno sahaja tidak bermakna apabila parti komponen seperti MCA dan Gerakan hampir dihumbankan ke dalam tong sampah sejarah.

Ini kerana kalau hanya bersendiri, Umno tidak akan mampu memerintah negara.

Hari ini, Najib sudah tidak lagi bercakap soal 1Malaysia. Apa gagasan terbarunya sudah tidak diketahui.

Pemilihan hari ini akan memberikan isyarat apakah orang Najib seperti Khairy Jamaluddin dan Datuk Seri Shahrizat Abdul Jalil mampu mengekalkan kedudukan mereka untuk menyokong beliau dalam apa sahaja dasar yang ingin beliau bawa.

Jika tewas Khairy dan Shahrizat, lebih sukar bagi Najib melakukan evolusi kepada Umno mengikut perkembangan zaman seperti bapanya, Abdul Razak dahulu.

Jaga kebersihan ketika sembelih lembu korban, kata JPV

Pengarah Jabatan Perkhidmatan Veterinar (JPV) negeri Dr Marzuki Zakaria  berkata langkah itu penting bagi mengelak berlakunya wabak penyakit kuku dan mulut.
   
"Daging lembu yang disembelih hendaklah diurus dengan baik bagi memastikan daging bersih dan selamat dimakan," katanya kepada Bernama hari ini.
   
Beliau berkata orang ramai yang ingin menyembelih korban perlu memohon permit JPV dan setakat ini, sebanyak 92 permit dikeluarkan bagi penyembelihan 152 ekor lembu meliputi tiga daerah.
   
Katanya, setiap permit dikenakan bayaran sebanyak RM10 manakala sijil kesihatan RM5.

Dr Marzuki berkata dijangka lebih 1,000 ekor lembu dan kira-kira 100 kambing akan disembelih sebagai korban di seluruh negeri.
   
Sementara itu, Persatuan Penternak Negeri Terengganu melaporkan harga lembu yang tinggi menyebabkan penyembelihan korban tahun ini kurang meriah berbanding tahun sebelumnya.
   
Pengerusinya, Hamid Salleh berkata harga seekor lembu mencecah RM3,800 tahun ini berbanding RM1,800 lima tahun lepas.
   
Justeru, beliau berkata orang ramai yang melakukan ibadah korban perlu membayar antara RM450 dan RM500 untuk satu bahagian. – Bernama, 12 Oktober, 2013.

Langit di ruang angkasa Arafah dijangka cerah dan berangin pada ketika tertentu dalam beberapa hari ini ketika lebih dua juta jemaah haji siap sedia untuk berhimpun di bandar Mina sebagai persediaan untuk mengerjakan Haji.  
   
Suhu purata paling tinggi adalah antara 34 dan 35 darjah Selsius dan paling rendah antara 23-25 darjah Selsius, menurut ramalan cuaca terbaru oleh beberapa laman web termasuk accuweather.com.
   
Weathercity.com meramalkan cuaca cerah pada petang Isnin bila jemaah haji berhimpun di Arafah dari Zohor hingga Maghrib memohon keampunan daripada Allah SWT. 
   
Rabu lepas, beberapa khemah di Mina dan Arafah runtuh akibat hujan ribut. Mulai semalam persiapan lojistik untuk wukuf berjalan baik dengan khemah untuk jemaah Malaysia siap didirikan.
   
Sementara itu, pihak berkuasa di Arab Saudi memberi jaminan bahawa segala langkah akan dilakukan demi menentukan perjalanan haji yang lancar. – Bernama, 12 Oktober, 2012.
