S. Korea 'temple cuisine' feeds body and soul

PYEONGTAEK (South Korea), Feb 3 —  A centuries-old tradition of Buddhist cuisine, with strict bars on foods linked to lust or anger, is enjoying a revival in South Korea, one of Asia's most high-stress societies.

"Temple food," as it is generally known, is moving out of the temples and monasteries and into mainstream restaurant culture, attracting a loyal following for its deceptive simplicity and health-giving properties.

Among its most skillful practitioners — and ardent promoters — is a 54-year-old monk, Jeokmun, who has devoted several decades to refining what he sees as a meditative diet that feeds both soul and body.

At his modest Sudoksa temple in Pyeongtaek City, about 60 kilometres  south of Seoul, Jeokmun teaches his techniques to an attentive class of a dozen students — mostly middle-aged housewives.

Shaven-headed with a round, tanned face, the monk shows off his knife skills as he dexterously chops cucumbers and bell peppers and cuts delicate slices of soft tofu.

His recipes for the day include tofu sauteed in plum-sauce, mushroom casserole, radish kimchi and noodles mixed in chilli sauce and vegetables.

"Temple cuisine means low-calorie dishes that make your body healthy and your spirit clean," Jeokmun said, as he makes fine diagonal slashes across the tofu slices to allow the plum-and-soy sauce flavour to penetrate.

Apart from a few dairy ingredients, temple food is largely vegan in nature and incorporates an impressive variety of wild roots, herbs and vegetables.

Its new-found popularity is partly attributable to the search for a healthier diet in a country which, like other Asian nations that experienced rapid economic development, has growing levels of obesity and diabetes.

As well as eschewing artificial flavourings and additives, temple cuisine also bans such vegetarian staples as chives, leeks, scallions, garlic and onion — known in the Buddhist traditions the "five pungent vegetables".

"The wisdom is as follows," Jeokmun explained. "Eaten cooked, these vegetable may incite the libido, while eaten raw they can set the mind to anger and greed."

South Korea is the world's third largest producer of garlic and a passionate consumer of the same.

For many Koreans, the absence of garlic from "kimchi" — the iconic national dish most commonly made of fermented cabbage — is unthinkable.

But Jeokmun sees no room for compromise.

Years ago, as a student reporter at a Buddhist college, he had been shocked to see scallion, garlic and even artificial flavour enhancers being widely used in the kitchens of many temples he visited.

Determined to bring the cuisine back to its roots, he set out on a nomadic life, visiting temples with renowned Buddhist chefs and learning their recipes.

In 1992, he launched a Korean temple food institute with like-minded monks and nuns.

In an effort to spread the message, he has taken part in numerous TV cooking programmes, given lectures and written several books, including one with 227 recipes that was published in 2000 and is now in its sixth re-print.

Jeokmun believes his food has wider appeal, including for foreigners who can have difficulties with standard Korean cuisine -- known for its liberal use of salt and spice.

For one of his students, Chang Bong-Suk, 43, the monk's teachings provide a path to bring a healthier diet to her family.

"I've been applying what I've learned here to cooking healthy meals at home, especially for my son who used to suffer from allergic skin problems," Chang said.

Her son's condition has improved as a result, she said, while admitting that her husband was less enamoured of the meatless diet.

"I transform the recipe a bit to make it more palatable for him," she confessed.

"For example, when I make a steamed pumpkin, I put some shrimp inside the hollowed-out pumpkin, together with mushrooms, tofu, ginko seeds and pine seeds demanded in the original recipe," she said.

While South Korean TVs, fridges and mobile phones have been exported with enormous success around the globe, Korea's highly distinctive cuisine remains relatively unknown.

In recent years, the government has invited overseas chefs to special "gourmet weeks," as it seeks to give Korean food the same exposure as Asian cuisines like Chinese, Thai and Japanese.

Some specialist dishes such as the pungent seafood delicacy "hongeo" — skate fermented in its own uric acid — will always be a hard sell, but staples like Korean barbecued beef and pork are already making inroads in the restaurant scene in western countries. — AFP-Relaxnews

Set ‘em up! It’s national cocktail day in Peru

LIMA, Feb 3 — Peruvians on Saturday downed their national cocktail, the pisco sour, with a nationwide celebration of sipping and dancing — even opening a museum in its honor.

The cocktail, made from a grape-based liquor called pisco, has been made in Peru since the 16th century. Added to it are a squirt or two of fresh lemon juice, sugar, egg white and crushed ice.

Historians say it was devised in 1922 in Lima by an ex-pat American bar owner whose last name was Morris.

On Saturday, all over Lima and elsewhere street stands manned by expert mixers served up pisco sours. Typical Peruvian dishes were served, and people sang and danced.

The drinks are practically sacred here. In 2003, then president Alejandro Toledo declared that the first Saturday in February would from then on be Pisco Sour Day.

And it was mandated that the pisco sour would replace wine and champagne for official toasts at the presidential palace and celebrations at ministries and embassies.

A pisco sour museum was inaugurated Saturday in the city of Paracas, in the southern region of, well, Pisco. — AFP-Relaxnews

New Orleans in party mode in lead up to Super Bowl

NEW ORLEANS, Feb 4 – New Orleans was transformed into one massive party today as the city prepared to host the 47th Super Bowl between the San Francisco 49ers and Baltimore Ravens.

The city's French Quarter was packed with visiting fans soaking up the atmosphere before the biggest game in American professional sports was due to start at 6.30pm EST.

Across the country, millions of people were having their own Super Bowl parties in preparation for a game that has all the ingredients of a classic.

The two teams left their hotels in the early afternoon and took a short bus ride through the crowded streets to the Superdome, which will be packed with more than 70,000 spectators.

For the first time in the 47 years of the Super Bowl, two brothers will go head-to-head for the National Football League championship.

John Harbaugh is Baltimore's head coach and his younger brother Jim has the same job with the 49ers and their sibling rivalry has dominated the build-up to the game.

The two players who have been the main focus in the lead-up to the game are Ravens linebacker Ray Lewis and San Francisco quarterback Colin Kaepernick.

Lewis is the only survivor from the Ravens team that won the Super Bowl 12 years ago. A 17-year-veteran of the NFL, who has spent his entire career with the Ravens, Lewis is retiring after the game.

Kaepernick's career is just starting. He began the season as San Francisco's backup quarterback but kept the job after getting his chance when Alex Smith suffered a midseason concussion.

While Lewis and the Ravens are chasing their second Super Bowl title, the Niners are attempting to win a sixth and tie the overall record held by the Pittsburgh Steelers.

The 49ers have never lost a Super Bowl, but this will be their first appearance in 18 years. – Reuters

Bale rocket saves Spurs blushes in win at West Brom

LONDON, Feb 3 — Tottenham Hotspur winger Gareth Bale showed absent strikers how it was done by blasting in a 67th-minute winner in a 1-0 Premier League success at 10-man West Bromwich Albion today.

The victory for fourth-placed Spurs, which came despite their only available forward Jermain Defoe limping off in the first half, put them a point behind Chelsea in third after Rafael Benitez's side lost 3-2 at Newcastle United yesterday.

The Londoners were helped by West Brom's Macedonia defender Goran Popov being sent off after 48 minutes for spitting at Kyle Walker but Spurs deserved the win because of Welshman Bale's continued heroics.

The 23-year-old's 13th goal in all competitions this term, following another cracker in the 1-1 draw with Norwich City midweek, summed up all his attributes as he evaded a challenge on the edge of the box and let fly with a swerving strike.

With Emmanuel Adebayor away at the African Nations Cup, Spurs' over-reliance on out-of-form Defoe was keenly felt by supporters but Bale is digging them out of holes as a Champions League spot looks more and more a possibility.

Ninth-placed West Brom had decent chances through Shane Long and Romelu Lukaku but perhaps missed fellow forward Peter Odemwingie, dropped after turning up at Queens Park Rangers without permission on transfer deadline day as he tried to force through a move.

Second-placed Manchester City host Liverpool, in seventh, later (1600 GMT) hoping to close the 10-point gap on leaders Manchester United, who won 1-0 at Fulham yesterday. — Reuters

For Valentine’s Day, men spend more, but on the wrong gifts

Posted: 02 Feb 2013 08:16 PM PST

The survey also found that only 58 per cent of Americans plan to celebrate Valentine's Day this year.

NEW YORK, Feb 3 — A new US survey finds that on Valentine's Day, most men plan to shell out an average of US$84.39 (RM262) to romance their significant others. Women will spend an average of US$48.13. That said, not many people get what they want when it comes to gifts.

According to a survey of more than 1,100 Americans from credit card comparison site CreditDonkey.com, 65 per cent men and women will take their date out to dinner, 38 per cent will buy chocolates, and 37 per cent will give flowers. Problem is, the gifts don't align with what people want, the survey suggests. Only 49 per cent want to receive dinner, while 30 percent want chocolates and 20 per cent want flowers.

However, only 8 per cent plan to give gift cards, but 15 per cent want to receive cards. Only 7 per cent plan to offer electronics, but 20 per cent want to receive electronics.

CreditDonkey researchers also found that only slightly more than half (58 per cent) of Americans plan to celebrate St. Valentine's Day at all this year. — AFP/Relaxnews

Meet India’s ‘Man with the Golden Shirt’

Posted: 02 Feb 2013 06:54 PM PST

Indian businessman Datta Phuge poses with a shirt made of gold, worth US$240,000, at a shop in Pune.

NEW DELHI, Feb 3 — India is a country known for its love of gold, but for one businessman a ring or chain was not enough.

Datta Phuge is now the proud owner of a golden shirt worth 12.7 million rupees (RM741,349), made up of 14,000 pieces of 22-carat gold and put together by 15 craftsmen over 16 days.

"Gold has always been my passion since a young age. I've always worn gold as jewellery in the form of bracelets, rings, chains," he told AFP.

The 42-year-old, who lives in the Pune district of western Maharashtra state, hatched the plan late last year with a local jeweller friend.

"We were thinking, is there something different we could do with gold? What has no one done before?" he said.

At 3.32 kilograms, the end product is so hefty Phuge said he had asked Guinness World Record to recognise his shirt as being the heaviest.

He only wears it for special occasions, along with numerous flashy gold accessories. The rest of the time the shirt is locked up at home.

His fashion choice may sound ostentatious in a country where an estimated 42 per cent of children under five are malnourished, but Phuge is adamant that "it is my property, it does not matter what other people think or say".

He seems delighted that the shirt, with its six Swarovski crystals for buttons and matching gold belt, has brought him his 15 minutes of fame.

Phuge, a grandfather who runs a finance company, also says he is a keen social worker and harbours ambitions to go into politics.

Showy displays of gold have become something of a trend in the area, started by late local politician Ramesh Wanjale who became known as the "gold man" around Pune — a title Phuge seems keen to inherit.

"Everybody knows me as the 'gold man' in the whole region. Other rich people spend one crore (10 million rupees) to buy Audis or Mercedes, to buy what they like. What crime have I done? I just love gold," he said.

India is the world's biggest consumer of gold, with purchases an essential part of religious festivals and weddings.

But faced with a rising import bill, the government has sought to discourage buying by raising import duty by 50 per cent.

Indians bought 933.4 tonnes of gold in 2011, the last year for which complete data is available, according to the World Gold Council. — AFP/Relaxnews

Affleck wins directors’ top award as ‘Argo’ hurtles toward Oscars

Posted: 03 Feb 2013 12:53 AM PST

LOS ANGELES, Feb 3 — Actor-turned-filmmaker Ben Affleck won the top honour from his peers at the Directors Guild of America yesterday for the movie "Argo", cementing the Iran hostage drama's frontrunner status for the Oscars.

The Hollywood directors' recognition for Affleck is an awkward result for the Academy of Motion Pictures Arts and Sciences, which did not nominate him for Best Director in what is considered one of the biggest snubs of this year's Oscars.

Since 1948, there have been only six occasions when the Directors Guild of America (DGA) winner has not gone on to win the Oscar for Best Director.

"I have nothing but respect for the Academy," Affleck said after collecting his first DGA award. The Hollywood star, a producer of "Argo", said he was thrilled the film was nominated for the Oscars' Best Picture award.

"You are not entitled to win anything," he said.

The DGA is often a good indicator of Oscar winners as DGA members are also members of the Academy. The Oscar for Best Picture also often goes to the winner of the DGA's award. The Oscars will be held on February 24.

Affleck triumphed yesterday over four directors who have all won the top DGA honour and gone on to win the Best Director Oscar.

Among those defeated yesterday was Steven Spielberg, whose Civil War-era drama "Lincoln" has lost to "Argo" in successive award ceremonies this season. The two-time DGA winner — for "Schindler's List" in 1994 and "Saving Private Ryan" in 1999 — collected his 11th nomination from his peers with "Lincoln".

The other three unsuccessful nominees were Kathryn Bigelow for Osama bin Laden-manhunt thriller "Zero Dark Thirty", Ang Lee for his 3D adaptation of the bestselling novel "Life of Pi", and Tom Hooper, for his screen adaptation of the hit musical "Les Miserables".

In "Argo", which is based on a real account, Affleck also plays the lead role of a CIA agent entrusted with extracting six Americans from revolutionary Iran after the US embassy is stormed. The agent, with help from Hollywood, creates a fake film and makes the Americans part of the crew.

So far in the awards season, Affleck has won Best Director at the Golden Globes while "Argo" won Best Drama. The cast was also recognised with the top honour from the Screen Actors Guild.

"There was a point in my life where I was really down and really confused ... didn't know what was going to happen and I thought 'I could be a director'," Affleck told the high-power Hollywood crowd yesterday.

"I don't believe this makes me a real director, but I think I am on my way," he said.

Another young director also collected a top award yesterday — Lena Dunham for Best Comedy Series for "Girls", the HBO show about four girls in Brooklyn and their travails over sex, work and making it in the big city.

"This is surreal, which I know is an overused Los Angeles word," said Dunham, who often appears in the show she created wearing little or no clothes. — Reuters

Frank Ocean wants peace, no charges against Chris Brown

LOS ANGELES, Feb 3 – Rising R&B star Frank Ocean said yesterday he will not press charges against singer Chris Brown, who he said had "jumped" him last week in a parking lot fracas.

The encounter between Ocean and Brown still could derail Brown's efforts to remain in compliance with his probation stemming from his 2009 assault against singer Rihanna, his on-again, off-again girlfriend, a legal expert said.

Earlier in the week, a spokesman for the Los Angeles County Sheriff's Department said Ocean was "desirous of prosecution in this incident," which occurred on Jan 27 outside a recording studio in West Hollywood.

Representatives for Brown could not be reached for comment on Saturday.

Sheriff's deputies had cited witnesses as saying Grammy-winner Brown, 23, punched Ocean, 25, in the brief altercation.

But Ocean yesterday posted a message on www.frankocean.com saying he wanted to move past the incident.

"I'll choose sanity," he wrote.

"No criminal charges. No civil lawsuit. Forgiveness, albeit difficult, is wisdom. Peace, albeit trite, is what I want in my short life. Peace."

Brown and Ocean both are nominated in the best urban contemporary album category at the Grammys Awards, which will be announced February 10 in Los Angeles.

On the day of the parking lot incident Ocean had said on Twitter that he "got jumped by chris and a couple guys."

He also said he cut his finger and Brown was later photographed with a cast on his right hand.

Brown, whose hit songs include "Look at Me Now" and "Run It!," was placed on probation for five years for the assault on Rihanna. He risks having his probation revoked if charges are filed against him.

But if the judge overseeing his case suspects Brown broke the law, the judge could move to find him in violation of probation even without a criminal charge, said Steve Cron, a defense attorney not connected to the case and an adjunct professor at Pepperdine University School of Law.

"Then, Brown would be entitled to have a hearing with witnesses and his lawyers questioning witnesses and so forth," Cron said.

Cron said prosecutors still can file charges even if a suspected victim does not cooperate.

If Brown is found to have violated his probation, a judge could send him to jail or order counseling, he said.

Los Angeles County Sheriff's spokesman Steve Whitmore said that if Ocean does not want to press charges, it would be difficult to proceed with the case.

Brown's entourage and that of Canadian rapper Drake were involved in a June 2012 brawl in a New York nightclub. No arrests or charges were brought in that case. – Reuters

Author of ‘American Sniper’ Chris Kyle shot to death, say reports

Posted: 02 Feb 2013 09:55 PM PST

FORT WORTH, Feb 3 — Chris Kyle, the former US Navy SEAL sniper who was responsible for 160 kills during his career as US Navy SEAL sniper, was shot and killed with another man at a gun range yesterday, the co-author of Kyle's book said.

A suspect, identified as Eddie Ray Routh, was arrested, according to reports.

Kyle (picture), who wrote "American Sniper" about his military service from 1999 to 2009, and another man were found dead at the Rough Creek Lodge's shooting range yesterday, according to the Fort Worth Star-Telegram, quoting Erath County Sheriff Tommy Bryant. The second victim was not identified.

"It just comes as a shock and it's staggering to think that after all Chris has been through, that this is how he meets his end, because there are so many ways he could have been killed" in Iraq, said Scott McEwen, who wrote the book with Kyle.

Rough Creek Lodge is located in Glen Rose, Texas, which is about 80km southwest of Fort Worth. Rough Creek Lodge referred calls to the Erath County Sheriff's Office but Bryant was not immediately available for comment.

Kyle served four combat tours of duty in Operation Iraqi Freedom and elsewhere, and won two Silver Stars and five Bronze Stars for bravery, according to his book.

After leaving the Navy, Kyle founded Craft International, a firm that provided combat and weapons training to military, police, corporate and civilian clients.

In a 2012 interview with Time magazine he was asked what went through his mind when he aimed at a target.

"The first time, you're not even sure you can do it," he said. "But I'm not over there looking at these people as people. I'm not wondering if he has a family. I'm just trying to keep my guys safe. Every time I kill someone, he can't plant an IED. You don't think twice about it."

Kyle is the co-author of another book coming out in May under the title "American Gun — A History of the US in Ten Firearms." For the book he fired 10 weapons — such as the Spencer repeating rifle from the Civil War, the Colt .45 used in the Old West and the Thompson sub-machine gun popular with law enforcement and gangsters in the 1920s — and discussed their parts in US history.

In the wake of the slayings of 20 children and six adults at a school in Newtown, Connecticut in December, Kyle was interviewed in January about rising calls for curbing gun violence in the United States. He told the website guns.com that he favoured arming teachers who have been screened and trained and spoke against restrictions on gun owners. — Reuters

Antara Kamahl, Datuk Shake, Sudirman dan nasib

Posted: 02 Feb 2013 04:25 PM PST

Menguruskan sensitiviti masyarakat majmuk

Posted: 02 Feb 2013 04:20 PM PST
